Antipasto Pasta Salad

Great recipe! A couple changes that we really enjoyed....rotini instead of shells, and feta instead of asiago. The last change I made was regarding the dressing. I made it according to the packet instructions and then whisked in a little ranch ( packet+ sour cream) into the dressing. Not a lot, just a little to make it a bit creamy. Will make again!

Fruit Dip

Great recipe! I used a bit less than 1/2 a cup of the marshmallow creme and about 3-4 ounces of the whipped topping. I juiced a few pieces of pineapple and strawberry that I already had on hand cut up and stirred everything together. Came out perfectly - everyone raved about it!

Banana Bread IV

Have finally decided to rate this recipe after making it dozens of times over the past year or two. This is definitely the best banana bread recipe I have tried. The one thing I do differently is cut down on the sugar and use only about 3/4 of what is called for and use half white sugar and half brown. I usually make this in a mini(ish) loaf pan - that kind that has room for 4 small loaves. I have found that 1 banana per loaf works perfectly. So if you happen to have one or two bananas on hand that are starting to get pretty brown that no one wants to eat anymore (like happens at my house) just adjust down and voila!

Taco Seasoning I

Good seasoning! While making tacos one night, my helpful son accidentally spilled the store bought packet of seasoning. I searched here and came across this recipe to the rescue!! Don't think I will ever buy a packet of taco seasoning again!

Cilantro-Lime Dressing

Awesome dressing!! I cut down a little bit on the jalapeños, garlic & honey ( just personal preference ) , but this is one of those dressings that you can tweak to your liking and it'll still come out great! I put it over a mix of greens, kale, raisins, chicken & feta. Great dressing for a healthier salad!

Monkey Bread

These turned out awesome! Some slight changes....I did as suggested and used both brown and white sugar. The sugar and butter recommended was enough for 2 cans of biscuits - not 3. For me the bread was done at 23 minutes so keep a close eye on it and don't over bake!

Lemony Olive Chicken

I'm a bit torn on reviewing since I improvised some, however I really liked the way it came out so I'd like to make the suggestion :) Instead of cream of chicken I used cream of mushroom & instead of milk I used some left over cream I had on hand. I used 2-3 times the lemon and threw in a clove a garlic. It was a hit with my husband and kids! Will make again!

Yummy Sweet Potato Casserole

Great recipe, although I did change a bit. I used half brown sugar & half white. I also doubled the vanilla, and halved the eggs and milk and the consistency was still a tad bit thinner than I would have preferred. Maybe my potatoes just took on too much water while cooking?? Not sure, I'll just have to play around with the recipe some more next time. Either way will make many more times to come!

Classic Macaroni Salad

Came out beautifully! I did cut the onion and sugar down to about 1/3 - just personal preference, depends on how oniony and/or sweet you want it. I did as suggested by another reviewer and added hard boiled eggs. Also as suggested made both the sauce and pasta the night before and chilled separately & then combined shortly before serving.

Slow Cooker Chicken with Mushroom Wine Sauce

Not so good. This came out too runny and bland for my family. I added the extra milk as others have suggested and it made it entirely too runny - maybe it's just me though since it seems like others have had better luck. Also...even with added seasoning ( other than what is called for ) it still came out too bland. I won't be including this in our rotation. Now off to find other slow cooker recipes....

Quick and Easy Chicken Noodle Soup

Love the recipe with my tweaks! I've made this quite a few times now - usually in the slow cooker. I skip sauteing the veggies ahead of time and just dump everything in the slow cooker. I use 2 boxes of the 32 ounce chicken broth and omit the vegetable broth. I add the spices already included in the recipe and include a dash of cayenne and a liberal sprinkling of parmesan cheese. I then throw in 2 frozen chicken breasts - some may want to add 3, but 2 is fine for my family of four. I let cook on high for about 4 hours. After the 4 hours most of the chicken has already fallen apart into pieces, what ever hasn't can easily be torn apart/separated in the slow cooker before serving.

Minestrone Soup I

Great recipe! I changed it a bit though....I substituted kidney beans for the cannellini beans. I also used fresh garlic instead of minced, and spinach instead of cabbage. I also included green beans, and a couple dashes of tabasco for a little more flavor. I also included more chicken broth than called for and even with that it was still much closer to a stew than a soup. I like my minestrone to be a bit more soupy so next time I will increase the broth ( and seasonings accordingly ) even more. All in all a great soup!

Slow-Cooker Chicken Tortilla Soup

Wonderful recipe, thank you! I have now made this recipe quite a few times and still absolutely love it. My kids and husband like it just as much too. This has now gone into our regular rotation. Serve with tacos or a taco salad and you have yourself a meal!

Broccoli Chicken Casserole I

Great recipe although I changed it some - as I'm sure we all do :) I used 3 large chicken breasts instead of 4 - I found this was still plenty for my family of 4 - we even had left overs AFTER my boys all had seconds and thirds. I added slightly less than a 1/4 cup mayo & 1/4 cup of milk. I mixed them together before adding to the casserole - didn't come out too runny at all! I steamed the broccoli along with some mushrooms before adding to the casserole. Last but not least I cooked the stuffing with slightly less water than it calls for before adding to the top. It came out great! Thanks!!

Four Cheese Macaroni

This was a GREAT recipe - although I did make a few changes....as I'm sure we all do :) I left out the eggs and vegetable oil. I also used just sharp cheddar & monterey jack since that is what I had on hand. I just eyeballed the salt and pepper and added some cayenne pepper, which really gave it a nice kick. Will definitely make again!

Baked Fettuccine Lasagna

This came out pretty good. My kids and husband really liked it too. I omitted the bell peppers since the hubby doesn't like them and used lasagna noodles instead of fettuccine. All in all a nice alternative to the traditional lasagna.

Peach Pie

Very good pie! It did come out a bit runny though despite incorporating some of the suggestions here - turning off the oven once done and letting it sit & also leaving out on the counter for a while after that. Maybe the peaches were just unusually juicy??? Good pie none the less!

Creamy Chicken Lasagna

Came out great! I did alter a bit though. I did half low fat cream cheese, half ricotta. I also added some extra seasoning to the chicken - garlic, salt, pepper, etc...I also had a mexican cheese blend instead of mozzarella. Will do again, thanks!
