Giving 4 stars because I did it totally different but used this recipe as a base. My husband can't eat beef and I was craving a pot roast. I used a pork roast instead - which I seared with a garlic powder/black pepper crust before placing in slow cooker, replaced water with cabernet, added carrots, pearl onions and baby portabella mushrooms. Cooked on low for six hours and then added really well-scrubbed whole red potatoes - I found a bag of perfect little ones - and cooked for another 2.5 hours. Perfection. Served with lightly steamed green beans and garlic crescent rolls.
