Baingan Bharta (Eggplant Curry)

I love this recipe and it's one of my meat loving husband's favourites! I do make quite a few modifications, as we like lots of flavour! I usually use 2 eggplants (diced then roasted in olive oil and salt) plus what ever other vege i have handy like cauliflower, beans or potato (also roasted). I double cumin, ginger, garlic and curry powder, use a tin of tomatoes instead of fresh, and add the yogurt as a side on the plate rather than cook it. All these changes probably make it far from authentic, but after making this dish regularly this is how we like it best. Thanks for sharing Yakuta!

Crab Crusted Grouper

I would have liked to give this 3 1/2 stars. The topping is yummy, but i just feel it masks the nice (and expenisive) fresh fish too much. Maybe I will try it on mushrooms as suggested next time.

Pan-Fried Steak with Marsala Sauce

I'm not sure where I went wrong, but our Marsala sauce was inedible. It was soooo sweet even with the stock added. Didn't help that our rump steak also turned out to be a really bad cut, so all in all a very dissapinting meal.

Italian Breaded Pork Chops

These turned out pretty good. My husband loved them and i thought they were ok (but i think that breaded pork chops just aren't really to my taste, so not a real reflection on the recipe). I had to make a few changes for what i had to hand, so used plain bread crumbs and added mixed herbs and garlic powder and used fresh parsley rather than dried. The chops were lovely and crisp when i cooked them in the skillet, but were a bit soggy when i took them out of the oven. Maybe next time I'd transfer them to a rack?

Roast Sticky Chicken-Rotisserie Style

It's true what every one else has said - this is the best roast chicken recipe ever. I used to avoid roasting a whole bird as always ended up with dry breast and raw legs. This turned out perfectly and so tasty. My husband loved it and I am now so happy I am one of those people who can serve up a delicious chicken roast!

Moroccan Salmon Cakes with Garlic Mayonnaise

These were really simple and quite delicious. I made my cous cous with water as I"m not a fan of orange flavour in savoury food. I halved all incredients as I only had a small tin of salmon and used 1 whole egg. The cakes stayed together, but i had to be very careful, so next time I would use 2 eggs. Will make again.

Byrdhouse Mushroom Barley Pilaf

This was a nice, easy, healthy option for dinner. I made a few adjustments...added some cooked chicken, procini mushrooms, corn and some baby spinach. I thought it could have had some more flavour, but hubby liked it and had seconds :-) Good option for getting some different grains into the diet.
