Orzo with Parmesan and Basil

Probably my favorite recipe I've ever made from this site. I always saute a couple of shallots in the butter before adding the orzo, as well as a decent sprinkling of crushed red pepper. I add shredded roast chicken right before serving. Really awesome. Much easier than laborious risotto dishes that I've made, and just as tasty.

Buffalo Chicken Soup

This was excellent. I made a few tweaks that I think contributed to the success. In addition to the onion and celery, I sauteed two hatch chiles (could use anaheim peppers) to give a little heat / flavor. I used 2% milk instead of half-and-half -- there is enough fat content already, and the flour creates all the thickness necessary. I then used 3 cups of chicken stock instead of the 1/3 diluted ratio suggested, which reduces the amount of salt needed but adds a lot of flavor. I used two large roast chicken breasts for the chicken. For the hot sauce, Frank's is a must for authenticity, though it is not particularly hot, so 1/2 cup was about right for me. I would also advise that you wait until the soup is essentially 100% done before adding hte cheese, and then add it in small batches so that it melts in evenly. All in all an excellent soup and one I will make again.

Easy Slow Cooker French Dip

I thought this was pretty good, but it's not ground-breaking as I had hoped. Others have mentioned that the beer is undetectable, and this is definitely true. I wish it had added a little bit of flavor. I will make this again, but it just didn't seem that different from every other pot roast I've ever tasted. Not much like a French Dip at all...

Zesty Slow Cooker Chicken Barbecue

I thought this was fantastic. I'm fairly new to slow cookers, and I had not been all that impressed with how all the pot roast / french dip recipes taste the same, but this was a great surprise! I'm from Texas and thus have high standards for BBQ, and this definitely met them. I used about three pounds of chicken breasts, a bottle of Emeril's original BBQ sauce, a 1/2 cup of Cardini Italian dressing, Annie's organic Worcestshire sauce, brown sugar, a yellow onion, and a few cloves of garlic. I rotated the chicken breasts after 3.5 hours and shredded them after 6.
