Authentic French Meringues

Couldn't be any easier or simpler. These are a favorite around my house since my kids can't eat any artificial colorings or flavors.

Angel Food Cake I

SUPER easy and SUPER yummy. Scroll down for some great tips on releasing the cake from the pan. I highly recommend parchment paper at the bottom of the tube pan. I also found a GREAT trick for separating eggs.... USE A FUNNEL!!! The whites slip right out and the yokes are kept in the funnel! Just be sure to separate over a separate bowl so that if a yoke does slip through, it won't spoil the whole bunch. Also, the almond extract is a GREAT addition to this cake.

Spiced Sweet Roasted Red Pepper Hummus

Baba Ghanoush

Quite Yummy. I used 2 small italian eggplants which I sliced in 1 inch pieces, salted and let drain in a colander to release the bitterness before cooking; I cooked the garlic (to make it more "sociable") and added the lemon juice as needed. It was my first attempt at baba ghanoush and it certainly won't be my last. This one's going in my recipe book!!!

Creamy Broccoli Casserole

If you're lactose intolerant, this recipe is not for you. I increased the salt to 1/2 tsp of kosher salt and added onion flakes and dill to the cream sauce before adding the broccoli. I also substituted a pie crust instead of the cracker crumbs. It makes a nicer presentation, and easier to serve. My son, the one who doesn't eat ANYTHING green loved it!

Pizza Dough I

This was my first attempt at making pizza dough from scratch. I dissolved the yeast along with the sugar and let the dough rise for 30 minutes. I could have made 2 crusts with the dough I had. Great recipe!

Oranged Cranberry Sauce

A huge hit at our Thanksgiving. I neglected to add water, and just boiled in the juice/brown sugar mixture and the result was FABULOUS! It set up very nicely. Was a very nice pot-pourri for my house too ;-)

Italian Wedding Soup I

YUM! This is just like the recipe from my favorite restaurant. I added more escarole. An easy tip for the meatballs is to just use a rounded 1/2 or 1/4 teaspoon measure to scoop out the meatballs. You'll be finished in no time at all!

Mazarin Cake I

My Swedish grandmother-in-law made this recipe for St. Lucia and at Christmas, only she tinted the almond mixture green for some reason or another. This is definately a recipie you make 2 of. One to serve and one to feed your husband!

Party Cranberry Salad

My Grandmother used to make a recipe very similar to this, and has passed it on to my generation -- we've added little bits, like 2 cans of mandarin oranges to call it our own. It's a family favorite!
