Three Animal Italian Meatballs

These were okay, but they would benefit from cheese and better spicing. Not worth making again, IMHO.

Overnight Berry Coffee Cake

This was absolutely delicious. I made a few changes to add nutrition: Replaced 1 cup white flour with 1 cup whole wheat flour. Eliminated 1/2 cup of white sugar. Replaced 1/3 cup butter with 3 T nonfat greek yogurt. Replaced 1 egg with 1 T flaxseed meal + 3 T water. Added about 1.5 teaspoons of vanilla bean paste.

Easy OREO Truffles

Chicken with Asparagus and Roasted Red Peppers

Delicious! The balsamic vinegar is key. I made this in January, when fresh tomatoes taste like cardboard, so I used a half can of diced roasted tomatoes with garlic. It worked well, but I'm looking forward to trying this again in the summer with fresh tomatoes.

Day Before Mashed Potatoes

Very good for its intended purpose. Great flavor. A warning to those who haven't tried day-ahead mashed potatoes; you will lose that light and fluffy consistency of freshly prepared mashed potatoes. For us, it wasn't worth the trade-off, but that has nothing to do with the recipe, just personal preference.

Hot German Potato Salad III

Fantastic, and quite authentic. I don't think extra sauce is necessary, but I do like to add some extra bacon. Letting it sit a full day before serving makes it even better. Thanks for the new favorite!

Lemon Garlic Tilapia

Great Recipe! I, too, skipped the raisins. I needed a bit more water in the glaze to make it run. I will use this dough as a base for breakfast breads in the future, too.
