Parmesan Tilapia

This is a great diet friendly dish that is simple to throw together for a weeknight dinner. Pair with a flavorful white like "Conundrum". Be careful not to overcook.

Chicken Breasts with Lime Sauce

Keeping the oil hot will prevent it from soaking up the oil - using a cast iron pan is the best to maintain the heat needed. The breading fell off mine; but it tasted good.

You need to season the fish well before broiling with some seasoning salt first - otherwise it is very bland.

Fresh Apple Salsa

I didn't use the fresh peppers - instead I used about 1/2 tsp of Cheyenne pepper. You really need to let this salsa sit for about 2 hours for the mixture to blend properly. Also - one can reduce the amount of onion. It went well with a grilled chiken kabobs that were seasoned with salt and pepper. This really added the flavor to the meal. I agree with a previous reviewer - its not for everyone, but I really enjoyed the unique combinations of flavors.

Baked Acorn Squash with Apricot Preserves

I used a sugar-free apricot perserve and sprinkled about a 1/8 tsp of Splenda brown sugar mix on each halve. I didn't have to cook it any additional time - mine was smaller than most squashes though - probably closer to three servings than four. My husband hates new vegetables and he will definately eat this one again and it has really added some flair to our diets!

Cut-Out Cookies Made with Oat Flour
