Oven Barbecued Beef Brisket I
I usually use my own brisket recipe, but I needed something simple & quicker tonight. Followed directions exactly, & ended up with a tough, overdone chunk of beef after only one hour & 48 minutes in the oven (it's a 2.83 lb. brisket). According to the recipe, I should now cook for an additional hour in the BBQ water mixture. Considering the condition it's currently in, I've reduced the temperature to 275, & plan to check it in 30 minutes. I feel like this could've been a success with a lower baking temp, a smaller roasting pan, & some liquid added in the beginning.

Cajun Chicken Pasta
This pasta is amazing! My husband would eat it every day if I let him. Even my four year old asks for it! The only variations I've tried are substituting the linguine with penne pasta, & slicing a couple links of andouille sausage to saute along with the chicken. I'll probably try adding shrimp as well. As it packs a lot of calories, it's probably best only occasionally, unless you use lower fat substitutes where you can. Everyone who eats this loves it & I'd give it ten stars if I could.

Chicken Teriyaki - It's a Secret
This didn't turn out the way I thought it would. I followed the recipe exactly, but somehow the marinade imparted a strange flavor that I wasn't crazy about. Husband & son liked it, though.
