Festive Fall Turkey Salad

Step 2 is how I usually make my cranberry sauce. This was such a great way to use up the leftovers! I didn't have any cashews or celery on hand but it was so simple and perfectly yummy. I'm happy to leave the first review here.

Awesome Sausage, Apple and Cranberry Stuffing

Vegetable Medley I

This was excellent! I didn't have a bell pepper but I added some mushrooms to the sauteed veggies - it was a natural fit. I also added more basil (about a teaspoon) and some garlic salt. It was the perfect recipe for using up that summer squash.

Chocolate Banana Bread Pudding

This was excellent! I reduced the sugar to a 1/2 cup per other reviews and thought it was perfect. It was good right out of the oven and just as good the next day heated up in the microwave!

Bone-In Ham Cooked in Beer

I liked this cooking method. It seemed very moist and tasty. The beer flavor was not noticeable (I used what I had - Hefeweizen). I would recommend not eating the pineapple though. Beer soaked pineapple = not good.

Sweet Potato Casserole II

This was WAY too sweet for a side dish, in my opinion. It made the dessert taste bland and boring. It tasted like a cross between sweet potato pie and pecan pie. Actually, I think the sweet potato mixture was sweeter than the pie I usually make. It was incredibly yummy of course, but if I make this again, I would definitely cut down the white sugar to a 1/2 cup. We happen to love sweets so we couldn't stop eating it but two cups of sugar is a LOT for a side dish.

Irish Soda Bread

FIve stars for ease and adaptability. I really liked the moist, biscuit-like consistency. I'm not a big fan of caraway seeds but they were pretty good. I don't like raisins at all so I didn't include them. I didn't have buttermilk so I used 1 c. skim milk + 1 Tbsp lemon juice for the buttermilk. I also added what little bit I had left of sour cream and plain yogurt to make up the other 1/2 c. buttermilk. It came out great! It was a perfect sized loaf for us. A nice and easy last-minute addition to our St. Patrick's day meal.

Delilah's Frosted Cut-Out Sugar Cookies

I didn't have much trouble rolling these out. I just made sure to keep the work surface floured and I used parchment paper between the rolling pin and the dough. I liked the texture - it was slightly crisp on the outside and soft and moist on the inside - but I wasn't blown away by the taste. I was looking for a sugar cookie that didn't need icing - this wasn't it. The icing was very good though. I prefer my sugar cookies without icing so I will not be making these again.

Carrot Casserole

I wish I had read reviews first so I could have known it would take twice as long to bake than stated. It worked out though because the dish was more like a desert and appropriate for after dinner. It should be called carrot pudding. I think I'll also reduce the sugar next time around. Highly recommended with the changes of less sugar and maybe less spices.

Hamburger Goulash

Excellent!! The whole family raved about this one with the changes recommended here in the reviews. I left out the potatoes because it seemed like a lot of unnecessary starch. I didn't have green beans so I substituted a can of diced tomatoes, but I'd like to try the green beans as I don't think that would be too bad. Either way, it's hard to imagine this dish without the diced tomatoes - they were perfect. I omitted the regular salt and added two tspns of garlic salt instead. I think I'll reduce the pepper to 1/2 tspn next time as it was a bit much for me. I also added a tspn of Italian herbs and I sauted the onions with the meat before adding everything else. And I cooked some spiral pasta seperately before adding to the pot. Yum!

Amy's Cilantro Cream Sauce

My only complaint is that I thought there was too much garlic but I realize that's a personal taste and I'm a little sensitive to garlic so I went ahead with five stars. The cilantro was the perfect amount. I started out with half a bunch and it definitely was not enough for my cilantro-loving tastebuds. I just smeared some on a soft taco and it was excellent!

White Chip Chocolate Cookies

Wow! These may just be the best cookies I've ever eaten! I can see how they might be too sweet for some though. I ran out of white sugar so I added 3/4 cup brown sugar to the 1 1/4 cup white sugar I had. Yum! So moist and rich. The whole family raved!

Simple Scones

"The best scones I've ever had" according to my husband and I'd agree. My toddler loved them too. I didn't have sour cream so I substituted plain lowfat yogurt. I also forgot to add the sprinkled sugar at the end but it wasn't necessary. This one is going in my favorites!
