Penne with Chicken and Asparagus

This was very light and delicious. Easy to make too. I did find that it needed a bit of salt to liven it up and I will add an extra clove or two of garlic next time. I also used whole wheat pasta. Even my picky 3 and 4 year olds ate without complaint!

Banana Pancakes with Berries

Incredible pancakes. I added a bit of cinnamon to the batter to add a little spice. I will use eated boxed pancake mix again!

Belgian Waffles

Absolutely perfect waffles. I made the batter the night before and had no problems. I made some on a belgium waffle iron and some on a regular waffle iron and they all turned out perfectly.

To Die For Blueberry Muffins

Asparagus with Parmesan Crust

Delicious! I added 3 minced cloves of garlic to a little bowl of olive oil and let it sit for half an hour so the garlic flavor was all through the oil before drizzling it on the asparagus. I had thin spears and it only took 8 minutes to cook. This went absolutely perfectly with my Easter ham.

Tommy's Ham Casserole

This was good, but I made some changes. I used 2 cups of cheddar cheese. I used fat free soup and fat free milk and it was still delicious, although I think next time I will use 2 cans of the soup as it was a touch dry. I added some onion powder and a minced clove of garlic as well. I also used whole wheat pasta (12.75oz box). My kids couldn't get enough and there weren't any leftovers last night!

Chunky Cheese Soup

This was incredible soup!!! Creamy and very tasty. My husband couldn't eat enough! The only change I made to this recipe was that I added some chopped fresh chives right before serving since I had some in the fridge. They added a nice flavor. Otherwise, the recipe is perfect as written.

Chicken with Asparagus and Roasted Red Peppers

This was good and easy to prepare. I made a few changes. I made my own roasted red peppers by sauteing some fresh peppers I had on hand in olive oil and garlic. I also started the chicken breasts in olive oil and garlic before adding the broth. I used thin chicken cutlets which greatly reduced cooking time. I used low-fat mozarella as well. It was very filling for such a low fat/calorie meal! I served with a side of brown rice.

Swiss Chicken Casserole II

This was really good! I made a few changes. Instead of slices of cheese I used a little over a cup of shredded swiss. I also only used 2 chicken breasts, cut down into thin slices. The smaller amount of chicken was perfect. If you make this with 6 breasts, double the rest of the ingredients or you won't have enough. I also added about 1/8 cup chardonnay to the soup and milk. I also recommend adding cauliflower, which is the perfect veggie with swiss cheese. My husband couldn't get enough and even my super picky kids ate some of it!

Cheese Garlic Biscuits II

My kids LOVED these biscuits and they don't eat anything. I thought they were a little flat, but very tasty. I added extra cheese and while they were cooking I added 3 cloves of garlic and a touch of salt to melted butter and let it sit so it had a really good flavor when brushed on. Mine didn't stick at all, but I did spray my sheet with a cooking spray before baking.

Asparagus Rolantina

This was really good. I used thin sliced deli lite ham instead and I used shredded swiss since that's what I had in the fridge. I think prosciutto would have been over the top salty, and I'm a salt lover. Anyway, the lite ham cuts the calories, and it tastes great. My husband stole the leftovers this morning for a nice lunch!

Turkey-Stuffed Peppers

I thought this was really good. I doubled it to 4 peppers because I had a pound of turkey. I added 3 cloves of garlic, but only one small onion. I also used red peppers, and I did not boil them first so they retained some crispiness once baked. Next time I might add some brown rice to the stuffing mixture. I served with homemade cornbread...YUM!

This was very good. I sauteed the spinach with 3 cloves of garlic before mixing with the cheeses and I only used one egg. I also used fat free ricotta to reduce the calories and fat content.

Oatmeal and Wheat Flour Blueberry Pancakes

I am giving these 5 stars even though my husband didn't like them. He's just not into healthy eating. I thought they were delicious and so did my picky kids. I substituted low-fat buttermilk for the soy and I used applesauce instead of oil. I also added cinnamon. Next time I will probably add diced granny smith apples as I think they will add an even better flavor!

Pesto Sauce

This was incredibly good! I arranged boneless chicken breasts in a 9x13 dish. I coated each breast with the pesto and then layered sliced tomatos on top. Sprinkled on shredded mozzarella and baked. So good!

Ground Turkey Casserole

WOW!!! My 3yr old daughter couldn't eat enough of this! I made some changes based on what I read. I used wheat rotini as the pasta. I sauteed the turkey with 3 cloves of garlic and half an onion in a little EVOO with some salt and pepper. I used a chunky salsa in place of the tomato sauce and I used a mexican cheese blend. Next time I think I will add a bit more salsa and add some milk to thin out the cream cheese mixture. Served with homemade cornbread. Very hearty and perfect for a cold evening.

Momma's Wine Cake

This was delicious!!! I used Chardonnay in the recipe and I sprinkled the bundt pan with a cinnamon/sugar mixture that was suggested. So moist and the smell if gave off was incredible.
