Blueberry Cream Cheese Muffins

I am writing this about 5min after eating one of these muffins. YUM! Great texture and taste. I used vegetable oil in place of olive oil because I don't like the olive oil flavor in baking. Other than that, I followed the directions exactly. There was much more cream cheese mix than needed for one batch of muffins so I ended up making two.

Banana Muffins with a Crunch

WOW!!! Even my 5yr old who hates bananas loved these muffins! I used half wheat flour and I omitted the granola since I didn't have any. I added a few milk chocolate chips. So good!

Broccoli Cheese Bake

WOW! This was so good. I haven't gotten a vegetable other than tomato sauce into my 5yr old son in over a year, and last night he actually ate this and loved it! I didn't have enough cheddar so I used a mixture of Cheddar, Mozzarella, and a Mexican mix. I also sprinkled a light layer of bread crumbs on the top with some grated Parmesan. I microwaved the broccoli for 5 minutes since I don't have a steamer, but it worked out well. The broccoli was still firm, which is much better than all the recipes with frozen mushy broccoli. Great recipe that has many variations!!

Strawberry Muffins

I thought these were very good and my picky son LOVED them. I used whole wheat pastry flour, and next time I will replace the oil with applesauce. I doubled the recipe and added about a 1/4 cup brown sugar as well as about 1 1/2tsp vanilla. These were sweet, but not overly sweet and a great way to use up the giant container of strawberries I had in my fridge!

Chicken and Bacon Shish Kabobs

This was awesome! Let me start by saying I had some last minute chaos before my party and in the rush to get these on the grill, I forgot the bacon. They were still fabulous without (but I can't wait to try them again with the bacon). I added red and yellow peppers to the skewers because I like veggies. Great marinade!

Honey-Mustard Beef Kabobs

WOW! This was a delicious marinade. I added red and yellow peppers to the skewers with the beef, but that was the only change. My guests raved about the shish kebabs and they were gone in a flash. The marinade as a dipping sauce was awesome as well.

Beer Lime Grilled Chicken

This was just OK. I let the chicken marinate for 4 hours and when I tasted it after grilling it tasted like plain old chicken. I even upped the amount of garlic. I think maybe it needs olive oil or something to make it stick better to the chicken.

Coconut Shrimp I

I don't eat seafood myself, so I'm relying on the reactions of my guests to review this. Apparently, it was incredible! All the shrimp I made were gone within a few minutes and everyone was raving about them. I made a dipping sauce using the orange marmalade, horseradish, mustard, and honey and it was very good.

Incredibly Delicious Italian Cream Cake

I made this last night for my husband's birthday party and I was a little nervous trying a new recipe a couple of hours before a big party but it was incredible!!! I used a couple of 8" round Wilton pans (one deep, one normal) and I sprayed them heavily with Pam Baking spray to avoid the sticking other reviewers mentioned. Other than that I didn't stray from the cake recipe. It was moist and fluffy and they dropped right out of the pans perfectly. I doubled the frosting recipe and it was the best frosting I've ever eaten!!! The cake looked beautiful and after I let it all set in the fridge for about an hour it was perfect for serving. There wasn't a piece left!!!

This was delicious!!! I used Chardonnay in the recipe and I sprinkled the bundt pan with a cinnamon/sugar mixture that was suggested. So moist and the smell if gave off was incredible.

Ground Turkey Casserole

WOW!!! My 3yr old daughter couldn't eat enough of this! I made some changes based on what I read. I used wheat rotini as the pasta. I sauteed the turkey with 3 cloves of garlic and half an onion in a little EVOO with some salt and pepper. I used a chunky salsa in place of the tomato sauce and I used a mexican cheese blend. Next time I think I will add a bit more salsa and add some milk to thin out the cream cheese mixture. Served with homemade cornbread. Very hearty and perfect for a cold evening.

Pesto Sauce

This was incredibly good! I arranged boneless chicken breasts in a 9x13 dish. I coated each breast with the pesto and then layered sliced tomatos on top. Sprinkled on shredded mozzarella and baked. So good!

Oatmeal and Wheat Flour Blueberry Pancakes

I am giving these 5 stars even though my husband didn't like them. He's just not into healthy eating. I thought they were delicious and so did my picky kids. I substituted low-fat buttermilk for the soy and I used applesauce instead of oil. I also added cinnamon. Next time I will probably add diced granny smith apples as I think they will add an even better flavor!
