Pumpkin Cheesecake I

I made some changes to this recipe to make it suitable for my husband who is diabetic. I used splenda and added just a touch of vanilla extract. I also baked it in a single deep dish crust instead of 2 regular. It was very good, even our non-diabetic friends enjoyed it. It was very fluffy and light and had a nice smooth consistency. We added a dollop of sugar free cool whip and a few chopped pecans before serving. I will definitely make this recipe again.

This is GREAT! I have had ceviche made with fish and shrimp before but this was my first time with scallops. It is amazing!!! The only thing I did differently was to finely chop the scallops (just a matter of personal preference) and add some serrano peppers. Will definitely make this over and over again. Thanks so much for the great recipe!

Coconut Poke Cake

This cake is GREAT! I used a can of unsweetened coconut milk instead of cream of coconut because I knew it would be too sweet otherwise. I also used some of the coconut milk in the mix as part of the liquid. It turned out perfect. Not too sweet with a nice velvety texture. Not at all mushy like I was afraid it would be. This is my husband's new favorite cake. Thanks Leslie for the wonderful recipe.

No Bake Cheesecake I

I used sugar free cookies for crust, Splenda instead of sugar and sugar free cherry topping instead of strawberries. I took suggestion of others and cut lemon down by half and added another package of cream cheese. With these revisions it was excellent!! Our dinner guests did not believe it was sugar free. I'm sure original recipe is woderful too but hubby is diabetic and I have to make adjustments for him. I will definitely make this recipe again!

Ground Beef Pie

This recipe needed a lot of help in order to be to our taste. It was too plain as is but with some adjustments was great. I added onion, green pepper, tomato and a lot of seasoning. The basic idea is very good but for adults it is just too bland.

Baked Bar-be-Que Chicken

I made some minor adjustments to this recipe, Since there are only the 2 of us I used a cornish game hen split in half. I also used a few more seasonings. I added some seasoned salt, black pepper and a bit of sea salt to the garlic powder. It came out very tender and flavorful. Add a baked potato and a salad and it was a great meal that seemed like it was a lot more work than it actually was. Thank you so much for a wonderful recipe that we will use again and again.
