Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Some changes I made make these delicious AND very healthy: like other reviewers, I substitued nonfat plain yogurt for applesauce and applesauce for vegetable oil. I also just added 3 egg whites instead of 2 whole eggs, splenda in lieu of brown sugar. I doubled the cinnamon, added a splash of nutmeg and added 1 teaspoon of baking powder. I also added about 1 cup of chopped walnuts, used frozen strawberries, 2 large mashed bananas. These were DELICIOUS and so nutritious! I highly recommend trying it!

Black Bean and Rice Enchiladas

A few modifications made this a 5 star recipe: Instead of two cups brown rice, I put in 1/2 cup bron rice and 1/2 cup corn. I also used no-sodium added diced tomatoes & a small can of diced chiles (small can), instead of canned tomatoes + chiles. I omitted chili powder to maek sure it wasn't too spicy. I added a small amt of cheese inside each enchilada, per other reviews, & poured enchilada sauce (I used Trader Joe's enchilada sauce) on the baking dish before laying them down. Instead of salsa on top of each enchilda, I poured more enchilada sauce. I topped them with diced green onions. These were sensational and my non-vegetarian family was not only asking for seconds but also for the recipe! Thanks, Christie!

Orange-Ginger Tofu Triangles

This was delcious! A few changes I made: 1) I didn't have any green onions, so I chopped up white onions and laid them on top of the tofu to bake. They came out great 2) I also didn't have fresh cilantro so I used a pinch of dried cilantro over each triangle. 3) While the tofu was baking, I sauteed fresh broccoli & bell papper (what I had in my fridge) in the marinade (as other reviewers have mentioned, there is a LOT left) until tender but crisp. THey were a perfect addition to the meal! I served all over brown rice with a side of Sriracha...amazing!!

Banana Pudding IV

Delicious but a little too sweet for my taste! I uesd nonfat milk to lighten it up a bit. To serve I layered the pudding, then banana slices then another layer of pudding. I topped with whipped cream and slivered almonds. I think it would go best following a lighter, rather than heavy, meal. Guests loved it!

Zucchini Patties

these are delicious! I made a few changes to make them a little more heart-friendly: i substituted whole wheat flour for all-purpose. I also substituted 3 egg whites for 2 whole eggs i added 2 tblsp of minced garlic, 1 tsp red pepper flake, 1 tblsp of italian seasoning. I also lightly pan-fried them using olive oil PAM instead of vegetable oil. Very delicious with a side of marinara sauce and so nutritious, too!

Black Bean and Corn Quesadillas

Delicious! Instead of cooking in olive oil, I cooked the onions, beans, corn in PAM cooking spray. I also omitted the brown sugar (and didn't miss it!). Truly a healthy, delicious recipe!

Quinoa and Black Beans

this was delicious! it tasted like a more veggie-heavy and nuttier (and healthier!) black beans & rice. a few things i did differently: 1) i added more cayenne pepper 2) i added a chopped green bell pepper 3)i also added a can of diced tomatoes. it came out wonderfully and definitely hearty enough for a main dish! we ate with some grated cheese, avacado and sour cream on the side. i recommend you try it; it can't be beat! :)

Red Kidney Beans (Rajma)

this is excellent and very similar to true "authentic" punjabi-style kidney beans i grew up on! i made a few changes that worked great: i substituted olive oil for canola oil (just to be a bit healthier). i added a cup of fresh spinach which complimented the beans nicely. instead of cumin powder, i sauteed cumin seeds along with the garlic and onion for a more authentic "indian" taste. i also left out the cinnamon, added a bay leaf, turmeric and red chili powder to taste for a nice kick. one of my all-time favorite indian dishes...delicious!

Portobello Mushroom, Fresh Peppers and Goat Cheese Pizza

this is delicious and very easy! a few variations i made: i sauteed the mushrooms and spinach in white wine vinegar before putting them on the pizza dough. i also spread garlic on all the pizza dough (not just the crusts) and also added fresh basil. next time i will add sundried tomatoes for extra tang. this is is a delicious, light pizza!

Mexican Rice II

Very delicious. I also added extra cumin, some garlic and a splash of paprika for an extra kick -- it turned out excellent! The rice complimented the 'spinach enchiladas verdes' perfectly.

Fried Rice Restaurant Style

this is so delicious! i did a few things differently: i doubled the amount of veggies and instead of carrots & peas, i added mixed vegetables and a few leaves of fresh spinach (i had some extra!). i also doubled the amount of egg. this was substantial enough for a whole meal! highly recommend!

Polvorones de Canele (Cinnamon Cookies)

I made these for a Christmas get-together and everyone loved them! I was surprised at how quick and easy the recipe was and how delicious they taste! Next time I will half the amount of cinnamon-sugar mix that I rolled them in b/c there was a lot left! I will definitely make this again and recommend it to my friends.

Polly Welby's Excellent Chocolate Mousse

This was delicious! This was my first time making mousse and it was a hit!! I made it for my boyfriend, sister and brother-in-law. I added a dollop of whipped cream and blackberries as a topping. The tartness of the berries complimented the mousse very well. Everyone raved!
