Soba with Toasted Sesame Seed Sauce

Reviewed: Oct. 21, 2011
Substituted balsamic with rice wine vinegar and added fresh ginger. Doubled the amount of sugar. Used frozen stir-fry mix instead of broccoli and added frozen edename for protein. Stir fried the veggies in sesame oil and garlic before adding the soba and sauce. Served it hot.

Homemade Black Bean Veggie Burgers

Reviewed: Mar. 15, 2010
Was very disappointed with these burgers. This recipe should be called "Bean Mush Burger" as it just tastes like smashed beans dried out into a patty. I had no problem with them staying together as I poured the batter onto a cookie sheet lined with parchment paper. Flavor was just ok. The texture was way off. Kind of like flavored sawdust paste. Crumbly mush in my mouth :( I've had many delicious veggie burgers, so I was really bummed with this recipe.

Rice and Lentil Soup in a Jar

Reviewed: Apr. 27, 2009
Came out very tasty. Didn't have any veggies, so this recipe was perfect. I used regular long grain rice (not instant) and threw in a 1/4 cup of pearl barley. Used ham instead of chicken (what I had). Didn't have poultry seasoning, so used cajun and a bay leaf instead. We loved it!!

Honey Wheat Bread I

Reviewed: Apr. 16, 2009
Perfect! Will cut the recipe in half next time. There was too much bread for just two people. Put in the bread machine on dough setting. Dumped into buttered loaf pan, covered with wet towel for 1 hour and threw it in the oven according to instructions. Super easy.

Ten Minute Enchilada Sauce

Reviewed: Mar. 25, 2009
Very disappointed. Not authentic at all. Tasted more like tomato sauce. Will stick to Las Palmas canned enchilada sauce until I find a better recipe.

Add stewed tomatoes and extra water. Also added whole bag of lentils. Used chicken bouillon instead of chicken broth.

Charley's Slow Cooker Mexican Style Meat

Reviewed: Mar. 25, 2009
Was disappointed. Hoped for a shortcut. Hot sauce covered up the taste of everything. And I LOVE spicy, spicy food. Wouldn't make again. I am mexican and we would never make carne like this. Just chuck, salt, pepper, onions, and a bay leaf. The spice comes from fresh made pico de gallo or salsa.

Real Homemade Tamales

Reviewed: Mar. 25, 2009
Followed the recipe for the filling. Exactly how I would make it with my grandma when I was a kid. But for the masa, just used salt, water, lard; as this was how my mexican family would always make it.

Rocky Road Ice Cream

Reviewed: Mar. 25, 2009
This one hit out of the ball park! The flavor and texture is dead on. Used half and half instead of the cream. My husband has never had rocky road due to severe tree nut allergies, so we made this with peanuts instead. Tastes just like Dreyers/Breyers but better because I can put anything I want in it. Will try it again with a shot of espresso and bits of snicker bars....mmmmmmm.

Amazing Whole Wheat Pizza Crust

Reviewed: Mar. 25, 2009
Fantastic! Used it to make calzones and it came out perfect. We've had trouble in the past with doughy centers, even with commercially prepared dough, but not this time. Was amazed at how much the crust rose. My hubbie's Italian family has a long history of making pizza and pepperoni bread, but this is our new favorite!

Spiced Yogurt Pound Cake

Reviewed: Mar. 25, 2009
I loved the whole yogurt idea, but was disappointed. It was a spice cake and not a POUND cake. My hubbie ate it to be nice. My search for a healthier pound cake continues.

Byrdhouse Mushroom Barley Pilaf

Reviewed: Mar. 25, 2009
Absolutely amazing! Tasted like a risotto without the work and considerably more healthy with the barley. Barley was also super cheap, 99 cents for a one pound bag! Only thing I would change next time is to use only one can of chicken broth and one part water. Was a little too salty for our taste. Had it with pan seared chicken breast and grilled asparagus. A+!!!!

Oatmeal Peanut Butter Cookies III

Reviewed: Feb. 20, 2009
He-Man of the cookie kingdom!! Absolutely amazing! BETTER than a Nutter Butter cookie...never thought I would ever say that. Chewy with crunchy edges and peanut buttery goodness. Filling is perfect, not too sweet. Regarding the flatness of the cookie: I used margarine instead of butter, this creates a flatter cookie, no need to flatten with a fork (this is true with any cookie recipe). Didn't have heavy cream, so used skim milk instead with no problem. Also used a small ice cream scooper to drop onto cookie sheet, which created perfect round cookies in about 3 minutes. Took only a half hour for entire cookie project, including cooking and assembling time.

Rosemary Roasted Turkey

Best way to season a turkey. I have made this for the past 5 years for Thanksgiving and always comes out fantastic. I usually cook the turkey in an oven bag, so it comes out extra moist. Delicious!

Hawaiian Banana Nut Bread

Reviewed: Feb. 20, 2008
Wonderful flavor! Very moist! I reduced the fat and sugar content by taking the suggestions of other reviewers so I could enjoy w/o guilt. Used 1 cup brown sugar only, 4 egg whites, 1/2 cup nuts, 1/2 applesauce, sub 1 cup oats for flour & 1/2 cup oil. Froze half the batter. Baked the rest @ 350 for 18-20 min for 12 muffins. Perfect with coffee or milk!

Extremely moist. Will never buy Jiffy Corn bread mix again. Added flaxseed for health benefits and gave it a wonderful nutty taste.

Excellent lemon cookie! They are soft and explode with lemon flavor. Omitted almonds due to nut allergies and still came out perfect. We have made this cookies for the last three Christmases. Will make again for this year's X-mas party.

Sour Cream Coffee Cake III

The most dense, flavorful coffee cake I ever tasted! My husband, who HATES sour cream, LOVED this cake. Great with a gingerbread cappuccino. Was still moist and delicious three days later. Going to make again this weekend for guests.
