Soba with Toasted Sesame Seed Sauce
Substituted balsamic with rice wine vinegar and added fresh ginger. Doubled the amount of sugar. Used frozen stir-fry mix instead of broccoli and added frozen edename for protein. Stir fried the veggies in sesame oil and garlic before adding the soba and sauce. Served it hot.

Homemade Black Bean Veggie Burgers
Was very disappointed with these burgers. This recipe should be called "Bean Mush Burger" as it just tastes like smashed beans dried out into a patty. I had no problem with them staying together as I poured the batter onto a cookie sheet lined with parchment paper. Flavor was just ok. The texture was way off. Kind of like flavored sawdust paste. Crumbly mush in my mouth :( I've had many delicious veggie burgers, so I was really bummed with this recipe.

Rice and Lentil Soup in a Jar
Came out very tasty. Didn't have any veggies, so this recipe was perfect. I used regular long grain rice (not instant) and threw in a 1/4 cup of pearl barley. Used ham instead of chicken (what I had). Didn't have poultry seasoning, so used cajun and a bay leaf instead. We loved it!!
