Spinach Turkey Roll

This recipe was great and easy. I used a whole bag of fresh spinch that I microwaved a few mins. until wilted. I used cheddar and leftover spagetti sauce.

Pasta Melanzana

Everyone loved this recipe. I did change a few things because I didn't have spinach. I grated 2 med. zucchini (for spinach), 3 small eggplant and 2 cups of uncooked elbows. Used a bit more cheese. Added some leftover chopped cooked chicken on top. Worked really well and will try again with spinach. A great way to use up garden vegetables.

Lemon Butter Chicken

Very Moist and only 5 mins. to prepare! Sauce would be good over rice. Made as written but you don't need the butter, the salad dressing has enough oil. Will definitely make a lot.

Creme Brulee French Toast

Great. Few changes based on others suggestions. For less clean up melt butter and brown sugar in baking dish in micro. Put egg/ milk mixture in large measuring cup and use handheld stick blender. Used 11X15 pan - 12 slices of bread with crust(crowded in pan.) Same amount of eggs and whole milk, 1 1/2tsp orange extract, 3/4 c brown sugar and 1/2 cup butter. 350 convection for 30 mins. Turned pieces over when finished. Crust sticks to bread instead of pan. Pan was easy clean up. Thanks for the recipe.

Southwestern Lasagna

Everyone loved it. Used flour tortillas, added two green peppers, used 2 lbs. ground turkey and doubled all the spices except salt. Didn't add the layer of cottage cheese and egg and it turned out perfect.

Cornmeal-Crusted Catfish

Glazed Dijon Carrots

I doubled the recipe but should not have doubled the sauce ingredients (except the butter). My husband and I loved it, the kids thought the mustard and ginger were too strong. It is a nice change from the sweet sauces. I will make it again.

Chicken Mozzarella

Great and easy! Used 14 chicken tenders in a 9x13 pan. They cook faster so I only needed to cook them 10 mins. @ 350. I used sliced fresh mozzarella, that was great. I placed them the sliced cheese on for the last 10 mins. with the sauce. Served with bow tie pasta and fresh green beans. YUM!
