Grandma's Easy Shells

Reviewed: Jul. 13, 2009
Other than adding ground beef and a 1/4 can of water to the sauce I followed the recipe. It's quick, cheap, and makes a lot. It's certainly better than boxed pasta meals and allows you to choose how healthy or not you want to make it. I used Multigrain pasta and light cheddar cheese and lean ground beef (fried and drained).

Spaghetti with a Kick

Reviewed: Sep. 9, 2007
Thank you! My husband and I really enjoyed this recipe. It does make a lot though, so I put the leftovers in hot, sterilized jars and put them in the oven at 275 for 20 minutes with lose fitting lids. once out of the oven you can tighten the lids (carefully). Once the lid seals you've got extra canned sauce for future use. It works really well, and you'll get to enjoy this yummy sauce again, and again without the added effort of making it. =)

Elk Chili

Reviewed: Sep. 8, 2007
Good, but a little sweet... I will use less sugar next time. instead of a 1/2 cup sugar I'll use at most 1/3 cup brown sugar. I did use less tomsto sauce then the recipe called for (1 14oz can). it was plenty of sauce... anymore it might have been the consistency of spaghetti sauce. Good recipe though. We really liked it! Thanks!

Blueberry Lemon Bread

Reviewed: May 6, 2007
I love lemon loaf, but I found this recipe not as "lemony" as I like (i like a strong lemon flavour). None-the-less, it's moist and blueberries are always good. To sweeten this recipe and give it a stronger lemon flavour I made a Lemon glaze from 1/4 cup icing sugar and the juice of half a lemon. Thanks for the recipe. =)

Firecracker Grilled Alaska Salmon

Reviewed: Jan. 30, 2007
I didn't have time to marinate the salmon so I made a glaze by altering the ingredients a little bit. I reduced the oil to 1/8 cup, added 1/3 cup water and increased the sugar by 1 teaspoon, added 1 tsp chili paste (in addition to the recommended chili amounts), and added 2 tbsp honey. I then boiled the sauce to 3/4 the recipe and glazed the salmon. I brushed half of the glaze on the salmon and saved the rest as a sauce. I then broiled it and brushed the remaning glaze over the salmon before serving. It turned out wonderfully! Although I had to make some changes due to time constraints, I very much look forward to trying the recipe as directed. We loved this! Thank you!

Lower Fat Banana Bread I

Reviewed: Jan. 4, 2007
My husband really enjoys this recipe. Banana Bread is his favorite and we are both trying to cut down our calorie intake so finding a low fat banana bread recipe that tastes like a regular recipe is fantastic; however I suggest covering the bread with foil after 25 minutes and removing it from the oven at 50 minutes. You'll get a much nicer looking and softer crust on the bread. Next time I might try adding some pecans to the mix.

Bean Soup

Reviewed: Jan. 2, 2007
I only had canned Navy beans so I pureed half of them and kept the other half whole. I then stirred them into the soup after I removed the bone. I really enjoyed this recipe. It's a nice light and tasty way to use my left over ham. Thanks!

Brooklyn Girl's Penne Arrabiata

Reviewed: Nov. 13, 2006
Mmmmmm... very good; however, I did make some changes to the sauce and followed others suggestions of using half the egg and breadcrumbs called for. For the sauce, I didn't have canned tomatoes so I roasted a red pepper and cut up some white button mushrooms to add body to the sauce. I also used 2 cups of my mom's thin tomato sauce. Around here we're not big pasta eaters, but I will make this again. Thanks!
