Sloppy Joes II

This is a great recipe and easy to double or quadruple !! One way to help make the "sauce" .....you WANT the liquid of the onion and peppers! So cook the ground beef and drain. THEN Add everything else and let simmer!! or throw in crockpot. I do like adding more of everything! More peppers, more onion, ect....but it's great as written. THANKS!

Garlic Kale

GREAT TIP for GARLIC LoVerS!! Smash garlic cloves only ( do not chop ) Add olive oil to warm pan (med low) add smashed garlic and watch closely sauté garlic until just when it starts to turn brown. Remove garlic with slotted spoon to cutting board and chop it after it cools. Add the kale to pan and turn up heat just a bit. When kale almost done add garlic. Garlic won't burn this way!!!! Yummy recipe!

Cream of Pumpkin Soup

This soup is great! Much more filling than expected. I followed advise of other reviews and add spices to taste. nutmeg, cinnamon, ginger, cayenne pepper and a bit more brown sugar. Do let it cook a bit and then add spices to taste. One thing I do different is use unsweetened coconut milk (organic, canned). This is great for LACTOSE intollerant or dairy avoiders. I have made this recipe 3-4 times of the last couple years and love this time of year for the reminder of ..OH YEA pumpkin soup!!!

Bow Ties with Sausage, Tomatoes and Cream

I LOVE this recipe. Super easy! And sooooo good. I have made this twice now. I used organic chicken sausage and lots of fresh herbs (basil, oregano, parsley and small amount of rosemary and thyme). Next time I will use less sausage (8oz) and another can of tomatoes. Just a personal preference... I was searching for bites with more tomatoes. Thanks so much for this great recipe!! Try this one, you won't be disappointed!

Tiny Tarts

I LOVE these. Only change I made is equal amounts of pecans and sugar (heaping 1/2 cup) and I did add the corn syrup as suggested. Makes exactly 24. The dough is SO easy to work with. I use a cookie scoop, place dough into mini muffin pans and use thumb to make center "hole". Very quick....then I use 2 teaspoons and scrape filling into hole. Is it Christmas yet?? I want to make these :+) BTW the filling does get light and "airy" but that is what this recipe is supposed to do. It is not thick, pecan pie like. They are so good. Everybody always wants the recipe. MAKE THESE Impressive for a cookie exchange or tray.

Flourless Peanut Butter Cookies

Love these and make them all the time. Try it with different nut butters. Just made with macadamia and cashew nut butter! YUM.

Baked Tortilla Chips

I made these last Christmas Eve and will make again this year! Mix all spices in a small bowl (I used extra) , add lime juice and oil ( I used 3 T olive oil). I brushed on both sides and stacked tortillas. I cut through whole stack at once into 8 wedges. Single layer and just watch really close. One minute they are not done and the next they are done!! Half way through take cookie sheet out and shake chips around. ( Chips closer to outside of tray get done faster) I used 6'' flour tortillas (my favorite). These were crisp, flavorful and lasted a few days in a ziplock.
