Banana Banana Bread

I used three cups of mashed bananas, white whole wheat flour, smart balance instead of butter. I added a tsp of vanilla extract and a tsp of cinnamon. I was disappointed because I thought it would be a lot more moist than it actually was. My boyfriend really liked it, but I didn't think it was as great as everyone said.

Cranberry Sauce

This was fantastic. I used Stevia instead of sugar and made my own juice with a florida navel orange in the blender. It was so simple and so flavorful, especially with a little orange zest added.. I am so happy I found this recipe.

Cranberry Sauce I

Instant Millionaire Pie for Diabetics

I don't really think this is good for diabetics. If you put fresh fruit in it, it helps. Canned pineapple offers little nutritional value in terms of enzymes and vitamins. It's better with blackberries, raspberries, kiwi, or even a few slices of banana. The crust is also all sugar, essentially as its refined.

Monkey Bread I

I made this three different times because I was determined to make great monkey bread and by the other reviews, this was apparently a perfect recipe. When I followed the recipe as written it came out extremely dry. It was better when I baked it at 325. But the best results came when I used the cinnabon buscuit dough. By far, wayy better than the cinanmon sugar on regular buscuits. Unimaginably better. The regular recipe just tasted sweet but unmistakably like regular buscuits.

Good Old Fashioned Pancakes

I always try to make things healthier when I can so I omitted the butter. I figured I would just top them with a litte Smart Balance and would coat my pan with a little of it as well. I like big pancakes, so I poured about half the batter into my pan (by accident!) and ended up with the biggest, fluffiest pancake ever! I think the first one always gets a little burnt, so be careful. It was delicious without the butter, but a little dry. I can only imagine what it would be like with it! I did add the vanilla and honestly probably a little more sugar than stated as well. :-) My advice would be to follow the directions as stated!

Chicken Breasts with Balsamic Vinegar and Garlic

If you are a onion lover like me, you can add some sliced onions to the initial stage of the recipe, where you are sauteeting your garlic. I have made this, my way, for quite an array of tastes(and personalities), and every single one of them has said it was great. I have even omitted the garlic and used a combination of onions and leeks with satisfying results, but I really think the onions and garlic is the best combination. Watch the time! This dish is best when the chicken is just done.

Apple Pan Betty

Do not let the simplicity of this recipe fool you! It is delicious! I made it one Sunday morning while I was feeling homesick. Instead of using bread cubes, after I cooked my apples for about a minute, I sprinkled flour in the pan to make a kind of crunchy topping with the butter and sugar. I am more of a creative cook and am not positive if I followed the recipe to a T, but what I made was really great and I used this recipe to inspire me. If you do add the flour, be careful not to burn it.

Pecan Crusted Chicken Salad

I liked this salad, but would like to make a few suggestions. I do not think the garlic dressing is necessary or even adds that much to the dish, besides extra calories. An easy substitution I can think of off the top of my head is perhaps some fat free plain yogurt with a little garlic powder and fresh ground black pepper... You can play around with it or eliminate it all togehter. Also, for an additional crunch, you can add diced celery. It compliments the blue cheese as well. If you didn't want to pecan crust the chicken, you can add candied pecans to the salad.

Soft Christmas Cookies

I did not care for these cookies. I was soo dissappointed! They had a strange aftertaste, and I used name brand products. I couldn't seem to nab them at the perfect time to take them out of of the oven. They were either too crunchy or too soft. Mine also were very crumbly.

Baked Macaroni and Cheese I

This is a good basic recipe. Instead of bacon, I used some diced ham. I love onions, so I browned and slow cooked a large vidalia until it was translucent and added that to the garlic. On the top I sprinkled some italian bread crumbs, a tiny bit of old bay (i don't exactly know why, it just struck me as I looked through my cabinet..lol) and it turned out really good. I used a combination of shredded provolone, swiss lorraine and a tiny bit of american cheese. It was different, but good. The white american cheese, which I normally think is flavorless and do not ever buy, made it really creamy and assisted the other stronger flavors. Try it, you might like it..lol.

Scrambled Eggs Done Right

I made these eggs using 3 egg whites and one whole egg, with 2 tsp. canola mayo, and 2 tsp. water. They really were creamy, light and fluffy. I like my eggs a little seasoned with light garlic powder, black pepper and salt.

Chantal's New York Cheesecake

About two weeks ago I stumbled upon this recipe and made it. Since then, I have made about five more from requests. I am not an experienced baker, I had never before made a cheesecake but not one of my cheesecakes cracked. Last night I whipped up another to take over my grandfather's house today and used a food processor. This was a mistake. While I was doing it, I could not believe how easy the food processor made it (I just figured out how to use the processor yesterday..lol..it has to be lined up and locked in for it to turn on..haha) Anyway, the cheesecake went from thick and delicious to absolutely the smoothist creamiest thing I have ever tasted. It also did not puff up as much while it was in the oven as when I use the hand mixer. I didn't give this recipe five stars because I think there are better tasting cheesecakes out there..my boyfriend's mom's is one of them, but this recipe is consistent and if followed correctly can come out beautiful.
