Chicken and Corn Chili

This was a HUGE success my family. After browning the chicken I dumped all of the ingredients in the pot and cooked it on high for 6 hours. I shredded the chicken when it was finished and it was amazing!

Slow Cooker Kielbasa and Beer

This was a HUGE hit, with a few tweaks: Sauté one thinly sliced purple onion and add to pot. Peel several cloves of garlic and add whole to pot. Chop and sauté one green apple and add to pot. Use 1 1/2 bottles/cans of beer and a large jar of sauerkraut. Sauté the meat before you add it to the pot. I squeezed in a large squeeze of honey and brown mustard (each). Next time, I'll probably add a chopped potato. I also wouldn't simmer on high, but on low.

Apricot Bonbons

These were a huge success with my "test audience." Very easy to make, though time consuming. Be sure to really pack the balls so that they stay together when you roll them in the confectioner's sugar.

Eggnog Fudge

This fudge is amazing! I normally don't like fudge but this one is so, so good. I was a bit more liberal with cinnamon and nutmeg than the recipe indicated and I skipped lining the pan with foil and just sprayed it with Pam. Excellent and so easy!

Pumpkin Fudge

I made this and used my students as my test kitchen; they are now calling this fidge "pumpkin crack" because it was so addictive! I thought it was a bit too tough and crumbly so I will probably add about twice the amount of pumpkin next time. Also, I skipped the aluminum foil step and just greased the pan and it worked quite well.

Slow-Cooked Oriental Chicken

Yummy! My very picky husband loved it, which is shocking. I used my personal rule of three: if it calls for one clove of garlic add 3 and I used splenda brown sugar. It is pretty salty so don't try it if you have high blood pressure! Also, a good dose of sauce is needed for a more flavorful bite.

Chicken Suiza Cornbread Bake

I loved this recipe! I substituted cream of chicken soup for a cup of the sour cream, too. I also used fresh mushrooms which I think makes a huge difference. Instead of adding peppers I added some of the water from the peppers and it gave it a tartness. Also, I used a swirl of grapeseed oil instead of the butter. So, so good!
