Zucchini Bars

This should be called Zucchini Cake! It was delicious! I used 1 cup of oil, and it wasn't oily at all. I also added chopped pecans and mini-chocolate chips. I made a different cream cheese icing, with a brick of cream cheese, 1 cup regular sugar and some vanilla.

Overnight Blueberry French Toast

This came out great! I took the suggestions of several other posters, and reduced the cream cheese to 1-1/3 bricks. I used french bread from the bakery, and softened the cream cheese first, then tore it with my fingers into little balls and dotted the first layer with it. This made a TON of syrup, which wasn't necessary. May consider a layer of maple sausage next time.

Brian's German Potato Salad

So spouse doesn't liky mayo, and wanted a more vinegar potato salad. This didn't look too difficult, and it had good reviews...it was YUMMY and a big hit at the cook out! The "sauce" cooked a whole lot faster than what the recipe said...after putting in the vinegar, and it thickened right up. One warning...this is not a low-cal recipe, but the taste is well worth the calories!

Beef Tips and Noodles

This is true comford food! I used half an envelope of just onion soup mix, and also added a good size dollop of sour cream. There were no left overs!

Tortellini Soup

I make this soup with two cans of chicken broth, meat tortellini, and use a can of diced tomatoes with garlic, basil and oregano----I saute a clove of garlic in olive oil first, then add the broth, cook the tortellini (frozen, not thawed) and then add then add 5 oz of frozen spinach....and the tomatoes...YUM...got from Weight Watchers.

Delicious Ham and Potato Soup

Wow! The name says it all! This was yummy and the perfect thing on a Winter night! Used canned chicken broth instead of the water and bouillon....and it was FAB!

Asparagus with Cranberries and Pine Nuts

Followed the advice of others and sauteed the pine nuts and cranberries first, so they wouldn't get overdone...but even after adding to the asparagus the dish was kinda bland and definitely needed more seasoning.

Zesty Slow-Cooker Italian Pot Roast

Yum! I've made this twice and both times it has turnhed out great....I didn't have a fresh tomato, so I just opened a canned of fire-roasted diced...I used more spices than the recipe calls for, and also put in some diced onion and fresh mushrooms...I did it on high for 5-1/2 hours, and it probably could have cooked less....I also took the roast out before serving and thickened the liquid into a nice gravy...served over egg noodles...Highly recommend!

Cranberry Spinach Salad

This turned out great! I used 2/3 spinach and then added some romaine for crunch....added sliced red grapes, mandarin oranges and apple chunks....VERY yummy!

Baked Potato Soup

This recipe ROCKS! I made it over two days....baked the potatoes, and made the chicken broth mixture, and then added the cubed potatoes to that and let it cook a bit...took it off the stove and put in fridge overnight....Next day, heated it up to boiling, then simmered it, and then stirred in the half and half....we garnished with bacon and shredded cheddar...it is a very thick soup, and is chunky---everyone loved it, and I upped the recipe for 12 servings....Highly recommend...could add cubed ham, too.

Corned Beef and Cabbage

This was my first attempt at Corned Beef and Cabbage on my own, and I was not disappointed. Turned out great! I took another reviewer's input and substituted a beer for 2 cups of the water. The only downside of this recipe is how long you have to endure the smell of cabbage cooking....
