Herb Rubbed Sirloin Tip Roast

After reading the other reviews I was hopeful but cautious when it came to the proportions of the spice mixtures in the rub. Looking at my 3 lb roast I was pretty sure that 2 tbsp of salt was going to be a lot for our taste so I cut it to 1.5 tbsp. then I am thinking, 1/2 tsp of cyanne pepper. that is A LOT of hot pepper. We like things spicy (no really, we do) but that's a whole lot so I cut it in half. Oh and I was out of thyme so I used sage but that's not really worth mentioning. Cooked it exactly as directed and was in the end very very happy. But I don't care what anyone else says that is one mad spicy roast. For a roast. If it were a burrito it would be normal. Next time I make it I will put a little sprinkle of cayenne but not even close to the cut back amount I used. But the roast was tender and juicy and fabulous and my husband thought a spicy roast was a great idea so there you go. Oh, and the salt was perfect.

Hot Jam Breakfast Sandwiches

made this twice, second time used cream cheese instead of butter, delicious both ways! Not as overly sweet as you would think from reading the recipe. My kids loved it as a snack after gymnastics.

Creamed Eggs on Toast

this was delicious. I made it for a day when I knew I would have to get dinner on the table in a hurry, boiled the eggs the day before and then threw the rest together that night. My only suggestion is to make sure that you add the milk slowly and give it a good chance to thicken. This would be just as good (probably better) for breakfast but what can I say, if it's easy and it's tasty, it's dinner in our house!

Broccoli Squash Bake

I have made this recipe many times now in many variations and it's always good. I don't limit myself to the veggies called for but use anything I have on hand, working in layers. I think it's best if you use at least some sauteed onion and either raw spinach or arugula. I also omit the egg and use about a cup of ricotta cheese mixed in with the milk. I do find that it tends to be too runny every time and I usually place a pot lid over the casseole and drain it into the sink. Other than that this is a winner! I am amazed at the quantity of veggies my family can eat when they are served this way.

Whole White Wheat and Honey Chocolate Chip Cookies

Thank you thank you thank you! These cookies are beyond belief they are so good! Because of dietary restrictions related to my son's asthma we do not use dairy or sugar in our house and these cookies were an amazing start towards a dessert we can all enjoy. To make them work for us I omitted the butter and dry milk, replacing them with a combination of 2 cups of milled flax seed and a half a cup of soy milk. I also replaced the chocolate chips with unsweetened carob chips. Obviously that is A LOT of changes from a traditional cookie recipe so I was shocked when I was able to bring them to a lunch play-date and the other kids actually ate them! Thank-you, it means so much to my son to be able to share with other kids. They are already on high request at our house and I think that we will be making them to have on hand.

Could this recipe be easier? No matter where I bring this I never have to deal with leftovers, everyone loves them from my in-laws to my husband's guy friends to the members of my stay at home mom group. This is one of my stock recipes, thanks so much!

Easy Whole Wheat Peanut Butter Cookies

I made this recipe just as written but added some carob chips . This is just the kind of recipe I wanted, I would reccomend it hands down to anyone looking for a more virtuous sweet snack. The only reason I didn't do 5 stars is because you really have to baby-sit the cookies during baking, do not leave the room! They cross over from raw to burnt in about two seconds. I would reccomend using a cookie sheet with an air pocket and I had to bake them at 300 to get them right. I would also bake them one small sheet at a time to minimise any losses the first go through. Seriously, I do a lot of baking so I know what I'm doing but the combination of honey and whole wheat makes for a quick burn. Also they were a little dry which might be unavoidable, next time I might add some applesauce to try to get it moister like some people did but I think they might burn even faster then. Hmmm.

Onion Soup Pork Chops

So delicious! So easy! I made this dish as directed except I subbed in long grain plain brown rice since that was what I had and added some chopped celery and onions to the rice thinking it might be blander than the wild rice in the recipe. It was so good everyone spent dinner making yummy noises and there were no leftovers. I would feel very good serving this to company since it seems like you worked way harder than you did!

Its so good that its good even if you make it wrong lol! ive made it just as written (delicious), ive also made it pared down to just the beef, ketchup, mustard, worstischire sauce and some raw sugar packets (this was a playdate dinner emergency) and it was STILL awesome. What more can a working mom ask for?
