Chicken Enchiladas I

Made a few modifications because of what I read in reviews and what I had in my pantry. I doubled the recipe because I was making a meal for a friend and one for my family. I only had 5 large chicken breasts, I cut them up into 2" pieces and cooked. I used tomato sauce but didn't add the water. The mix was really soupy as is. After all ingredients were combined (except I didn't have peppers so omitted them) it was still soupy so I added a can of cream of chicken and it was okay (still a little soupy but not as bad). I also added a can of chicken. I put green enchilada sauce on top instead of taco sauce. Turned out great and my friend said her and her family loved it!

Sandy's Casserole

I needed something that I could make with the ingredients I had. I didn't have mushrooms or onion so I used an onion soup packet. It came out very onion strong but it still tastes good to me, maybe not to my kids so much. I stirred a couple times while cooking to get all macaroni to cook. Topped with French fried onions (yeah, probably didn't need to do that). Next time maybe I'll have more of the ingredients on hand.

No-Fuss Turkey Noodle Soup

Tasty Sweet Potatoes

I forgot to mention that I added a cinnamon blend to mine because I love the spices. Since there was no picture posted, I took a snapshot of my serving bowl before devouring the rest.

Ham, Potato and Broccoli Casserole

This was a hit with my husband! I liked it, but he seemed to love it! I didnt change the recipe, just doubled the amount for two casserole dishes. I gave the second dish to the local Mormon missionaries since they don't get home cooked meals often. We'll see what they think when they return the dish.

Grilled Chicken Cordon Bleu Sandwiches

I used a grilled chicken breast cut in half lengthwise, sour cream/miracle whip combo, provolone cheese, and ham. My husband said it reminded him of a Cuban sandwich (he's Cuban). I thought it was very good and will most likely make again and again! Very filling!

Creamy Rice Pudding

Better than I expected! I used Evaporated Milk since others said it wasnt creamy enough. I didn't add raisins and added a touch of cinnamon to please my tastebuds. Boy oh boy were they pleased! Excellent recipe thats quick and easy!

Easy Peach Crisp II

I'm an inexperienced cook who has limited items in my pantry, but I had canned peaches. One evening I wanted to make a dish for a social event. It was my first time baking a crisp like this so I didnt know how it'd turn out. I felt hesitant to place my dish amongst all the store bought items on the table. Afterward, there were alot of left-over storebought food but this peach crisp was GONE! People were shocked when I said that it was my first time making it because it was so good. That was a huge boost to my cooking ego! Thanks for the super easy recipe!
