Berry Almond Bars

i thought these were great and so did the friends i made them for... which was most important:). they were so moist, yummy and easy. i didn't get any complaints, but personally i would cut the sugar to 1/4c. the white choco gives a lot of sweetness. i would also bump up the jam to 3/4c. i would have liked a little more jam. i used raspberry jam. next time i will try lemon curd or lemon bar filling in place of the jam because i think lemon would taste amazing with white choco base.

Honey Crunch Pecan Pie

i have made this pie so many times and thought it was about time i gave it a proper review:). obviously... since i have made it a million times... i LOVE this recipe. the crust is easy to work with and the filling is so yummy... i sometimes use all brown sugar for my filling. but what makes the pie is the topping. the honey topping puts this pie above other pecan pies. i have made the topping by itself to serve with apple pie, banana cheesecake, ice cream, etc. but for this i add a little cream or milk to thin the sauce before i add the pecans because otherwise when it cools it's like hard toffee. please people... make this pie:).

Puppy Chow I

one word..... dangerous. it was impossible to not eat too much of this stuff. i think i successfully consumed half the batch all by myself over 2 days:). i used semi sweet choco and my box of cereal was only 15oz. the only thing i think i would try differently next time is to mix powdered sugar and some cocoa together so the coating wouldn't be quite so sweet. i know that the powdered, sugary sweetness is the way it is suppose to be...... but i think i could probably eat more if it was toned down just a little:).

Beth's Spicy Oatmeal Raisin Cookies

i know... why bother to review when so many people have already made it pretty clear that this is an AMAZING recipe, but i had to:). i printed this recipe at least 5 years ago and it has been my go-to recipe for oatmeal raisin cookies. i leave the shortening out and use only butter, but that is the only change. i bake them until they are still slightly soft in the middle and they stay moist for days. the most delicious oatmeal raisin cookie i've ever made or tasted.

Mmm-Mmm Better Brownies

i printed this recipe out over 5 years ago and felt obligated to finally write a review. these are simple, but AMAZING brownies. so moist and fudgy. i usually leave out the walnuts and always make with melted butter instead of oil. these keep well for days. i usually line the pan with lightly oiled foil to easily remove the brownies from the pan. when the edges just start to pull away from the sides i take it out of the oven. that way the edges crisp up a little, but don't get too hard. these brownies are so easy and delicious.

Fruit Cocktail Cake VI

i was looking for something really quick and easy to make on a friday morning. this was definitely both..... but i wasn't expecting this cake to be soooo yummy! i cut the recipe in half and made in 8x8 dish. i ended up still using a full can of fruit cocktail and added about 1/3c. of extra flour because all the extra juice made the batter a little runny. i thought it might turn out a bit gummy because of extra juice.... but it was perfect! tonight.... 4 days after making the cake, i had a slice and it is still moist and yummy. great, super easy cake! my husband loved it:)

Tater Tot Casserole

i can't say this is the healthiest of meals.... but it is easy and satisfying. i didn't use worchestshire sauce.... thought i had some, but didn't. i used lowfat soup and added a small bag of peas and carrots to get some veg in there. i also added an extra squirt of ketchup and garlic powder. with the peas and carrots, it reminded me of a shepherd's pie with the tater tots replacing mashed potatoes. would definitely make again. great when you need something fast and tasty:).

Lentils and Rice with Fried Onions (Mujadarrah)

i only gave 4 starts because it lacked some ingredients to make it true mujadarrah. i am from the u.s., but my husband is jordanian and we live in jordan. i have had mujadarrah so many times...... but had never made it:). this recipe was almost spot on except that(as other reviewers mentioned) it is missing crucial spices. i added a good sprinkling of cinnamon to the onions while they were cooking and i also added a good teaspoon of cumin to the lentils and rice as they cooked. you can't leave these out! i only used half of the olive oil and i used 3 onions...... the more extra brown/burnt onions, the better:). and sour cream is a definite no no. yogurt is a yes.

Fluffy White Frosting

this is a simple and fantastic white frosting. it is perfect for cupcakes and easy to tint using the colored gel. it tastes like marshmallow fluff.... but not quite as sweet. it has a beautiful sheen to it after it has been whipped and is very easy to work with. if you don't want a crust to form, be sure you keep your cake/cupcakes covered until you are ready to serve.

Bread Pudding II

loved this recipe. delicious and so easy. i used more bread than called for..... probably around 10 slices of plain old sandwich bread. it was a bit dried out and tough, but i didn't want to throw it out. i cut off the crust and didn't really measure the raisins....... but i know it was more than 1/2 c. i put too much and will measure next time:). i used golden raisins and i think that it would have been a bit bland without them. i will try adding walnuts next time. i think it would be a nice addition. but even without, i would make it again. great way to use up old bread.

Applesauce Bars

this was a very simple, easy bar to make. i doubled the recipe and made it in 9 x 13 pan. had i not, the bar would have been much too thin for me. the spices were tasty, but i did not find anything special about this bar. it's not that i didn't like it.... i just wasn't wowed. i didn't find it memorable. i will keep looking for another applesauce bar/cake.

Gobble Up Granola Snacks

the easiest granola bars ever! ..... and very tasty, too. however, i gave 4 stars instead of 5 because i found them too sweet and in need of tweeking. the second time i made these, i increased the pb to 2/3 c. as some other reviewers had suggested. i changed the corn syrup to honey and decreased the brown sugar to 1/3 c. i now only use a 1/4 c. of brown sugar. i've made these with rice crispies, but prefer special k or nestle fitness and crush the flakes with my hands when i mix them with the oats. i love the consistency of these bars. they kind of have the texture of a rice crispie treat. i love cutting them into bite size squares and eat a couple when i'm on the fly. these are perfect for kids:).

Chunky Monkey Brownies

these were very moist. i didn't think the banana flavor shined as much as other reviewers thought... it was more of a hint for me. i left out the nuts, but i would probably add them next time. i also topped these with ganache to jazz up for a gathering. they were delicious with the ganache:). i would make these again.

Spinach and Rice Alfredo

This was delicious! I substituted quinoa for rice and evaporated milk for cream. Everything else the same. Will make over and over. We loved it. My 9month old loved it too:)
