Kale Soup

When I made this, my wife called it "resturant quality".I added spinach, and used red and white beans for some color.A dash(or more!) of cayenne puts a little zest in it.We found we like it better if the greens are left with a little firmness, and not over-cooked. So good, and so good for you. This recipe is fantastic.

Tasty Baked Meatballs

I used ground pork that I got on sale for the ground meat. Other than that, I followed the recipe exactly. They were excellent. Very moist, yet firm. I ended up with almost 5 dozen meat balls, freezing about half of them

Manhattan Clam Chowder

I used a bag of mixed seafood in addition to the clams. Put in 2 stalks sliced celery and 2 sliced carrots in place of the bell pepper. Also used fresh chopped parsley and 2 tablespoons of " Old Bay" seasoning to spice it up a bit.This recipe was so easy to make and came out great. I will definetly make this again.

Very Easy Mushroom Barley Soup

South of the Border Chicken Tortilla Bean Casserole

This was a good recipe. My family loved it except for the high calorie content.In the future, I will cut the amount of cheese and torn tortillas in half. Also, a 9x13 baking dish is not big enough. I used a 9x15x3 deep, and the recipe filled it to the brim. I will drop the cinnamon next time also. Other than that I followed the recipe exactly and it was pretty good.

Insanely Easy Vegetarian Chili

Very good recipe. I didn't have red bell peppers, so i subbed a cup of cubed zucchini. Also cut cumin in half and added crushed red pepper flakes( 2 TBS.), and 3oz. chopped jalapenos for some kick. Will make again. Very easy.

Baked Buffalo Wings

These were the best,crispiest baked wings.I baked the breaded wings at 425* for 30 minutes, then took them out, coated with sauce, then cooked them on the other side an additional 25 minutes. I was afraid the sauce would burn if on the wings the entire baking time.

Crispy Fish

Very tasty and crispy. I used 1/2 cup flour and 1/2 cup cornmeal as other reviewers suggested. I also added an egg in the milk dip to help the mixture stick to the fish better. Great recipe.

Tomato-Curry Lentil Stew

This was a good, healthy recipe. I like my food spicy, and added a finely diced serrano pepper to the mix. Next time I will also use chicken stock for more flavor.

Crispy Baked Chicken

Chicken was moist, breading was crisp, but bland. I think next time I will replace the chili powder with other spices( Paprika, more garlic powder, etc.)Easy but dissapointing taste wise.

Bean Soup With Kale

This recipe is fantastic. I use 2 types of beans for variation and some color. I also added a 6 oz. package of spinach .( Make sure you drain the spinach well or it can overpower the flavor of the soup)It is loaded with vitamins. My wife calls it "Resturant Quality". Will make again and again.

Black Beans and Rice

Great,easy,recipe. I used brown rice. Sauteed onion, garlic, celery and tomato with the cumin and extra cayenne. Added the beans to this for 2 minutes at the end and then mixed in the cooked rice. The flavors blended beautifully. Will add diced jalapenos next time.

Rolled Dumplings

These were good, not great. I would advise using the largest diameter pot you have, to do as many in a batch as possible. The broth really thickens and has to be changed after about 2 batches of dumplings. I let mine cook about 15 minutes to get the right consistency.

Appetizer Chicken Kabobs

The small size of the kabobs let them grill up on the crispy side. I added zuchinni slices, red bell pepper, and sliced serrano peppers for color and some heat. My guests loved them. I arranged the kabobs in a grilling basket to make them easier to flip and remove.

Roasted Vegetable Lasagna

My first try at lasagna and it came out great.Thanks to the reviewers that suggested tossing instead of brushing veggies. Added a little garlic powder in between layers. Would also cook uncovered a few minutes more to brown cheese slightly on top .Great recipe.My teenage son even liked it. Will do again.

Escarole and Bean Soup

Great Soup! Left out the adobo and beans. Added 3 cups kale,3 sliced carrots,3 sliced celery stalks, 8oz. sliced mushrooms and a tsp. of dry parsley.Simmered for 10 min., then added escarole, kale and mushrooms for additional 5 min. Greens were still a little crisp. The mushrooms added a unique flavor.

Firecracker Grilled Alaska Salmon

I followed this recipe exactly except for using olive oil instead of peanut oil. The salmon came out great. My wife said it was the best salmon she had ever had. I did marinate it overnight as other reviewers suggested.
