Tasty Baked Meatballs

I used ground pork that I got on sale for the ground meat. Other than that, I followed the recipe exactly. They were excellent. Very moist, yet firm. I ended up with almost 5 dozen meat balls, freezing about half of them

Escarole and Bean Soup

Great Soup! Left out the adobo and beans. Added 3 cups kale,3 sliced carrots,3 sliced celery stalks, 8oz. sliced mushrooms and a tsp. of dry parsley.Simmered for 10 min., then added escarole, kale and mushrooms for additional 5 min. Greens were still a little crisp. The mushrooms added a unique flavor.

Black Beans and Rice

Great,easy,recipe. I used brown rice. Sauteed onion, garlic, celery and tomato with the cumin and extra cayenne. Added the beans to this for 2 minutes at the end and then mixed in the cooked rice. The flavors blended beautifully. Will add diced jalapenos next time.

Baked Buffalo Wings

These were the best,crispiest baked wings.I baked the breaded wings at 425* for 30 minutes, then took them out, coated with sauce, then cooked them on the other side an additional 25 minutes. I was afraid the sauce would burn if on the wings the entire baking time.

South of the Border Chicken Tortilla Bean Casserole

This was a good recipe. My family loved it except for the high calorie content.In the future, I will cut the amount of cheese and torn tortillas in half. Also, a 9x13 baking dish is not big enough. I used a 9x15x3 deep, and the recipe filled it to the brim. I will drop the cinnamon next time also. Other than that I followed the recipe exactly and it was pretty good.

Rolled Dumplings

These were good, not great. I would advise using the largest diameter pot you have, to do as many in a batch as possible. The broth really thickens and has to be changed after about 2 batches of dumplings. I let mine cook about 15 minutes to get the right consistency.

Firecracker Grilled Alaska Salmon

I followed this recipe exactly except for using olive oil instead of peanut oil. The salmon came out great. My wife said it was the best salmon she had ever had. I did marinate it overnight as other reviewers suggested.

Very Easy Mushroom Barley Soup

Crispy Fish

Very tasty and crispy. I used 1/2 cup flour and 1/2 cup cornmeal as other reviewers suggested. I also added an egg in the milk dip to help the mixture stick to the fish better. Great recipe.

Tomato-Curry Lentil Stew

This was a good, healthy recipe. I like my food spicy, and added a finely diced serrano pepper to the mix. Next time I will also use chicken stock for more flavor.

Appetizer Chicken Kabobs

The small size of the kabobs let them grill up on the crispy side. I added zuchinni slices, red bell pepper, and sliced serrano peppers for color and some heat. My guests loved them. I arranged the kabobs in a grilling basket to make them easier to flip and remove.

Margarita Grilled Shrimp

This recipe was good if you love the taste of fresh cilantro. I grilled half of the shrimp and served the other half chilled.People liked them both ways.I, personally thought they were just OK. I like spicier food, so maybe more hot pepper if I make this again.

The Best Meatballs You'll Ever Have

Very easy and tasty recipe. I added 2 tbsp. parmesan for extra flavor. Also be sure to evenly brown entire meatball for a good texture. Turn frequently on lower heat to prevent burning.

Round Steak and Gravy II

Very easy and tasty recipe. I used onion soup mix instead of the canned. Also added 10 oz. can of mushrooms.Did have to add some cornstarch to thicken gravy. Served with brown rice. Very hearty dish

Roasted Red Pepper and Crab Soup

This soup was good, but needed something more. I used fresh basil and three garlic cloves instead of the dry seasonings. Doubled the cayenne and added a tsp. of Old Bay. I did use imitation crab, and I think that was what left me slightly disappointed. I will make this again with real crab.

Carrot Cake XI

Fantastic and easy. I used half the sugar and oil as was suggested by other reviewers. Added 3/4 cup of cinnamon applesauce. Cake was moist and firm. I used "Cream Cheese Frosting II" recipe with half the sugar for the icing. It was great, but use more sugar if you prefer your frosting sweeter.
