Spicy Shredded Beef

This was so easy and tasted like it was a lot of effort. I omitted the oil and stuck everything in the crockpot on high for 4 hours. It shredded up just perfect.

Chocolate Caramel Brownies

These are fantastic! They were the talk of my party, everyone was asking me which brownie was the one people were talking about. My caramel package only had 11 ounces and I omitted the pecans and it turned out great. Make sure to spread the bottom half of the brownie mix over the entire pan, I thought it would spread more when it baked, but I ended up missing the bottom on some of my brownies.

Sugar Coated Pecans

I did 2 egg whites but followed everything else exactly as the recipe said and they are sooo good! I'm definately making another batch and plan to use these as Christmas gifts.

Restaurant-Style Hashbrown Casserole

This was soo good, exactly what I had in mind for a family get together and it was the only thing that people went up for seconds, it was so good!! I added 8 oz of (fat free) sour cream and topped with with melted butter mixed with saltine crumbs.

Chicken with Stuffing

Easy Lemon Cake Cookies with Icing

These seemed to melt in my mouth! My husband doesn't like lemon flavored desserts, but loved these! I am high altitude and cooked these for 10 minutes and they were very soft. At 8 minutes they were really doughy.

Cha Cha's White Chicken Chili

I have made this several times and it's my "go to" chili recipe now. I leave out the onions because we don't like them and to make it healthier, I leave out the oil and cheese entirely. I used 2 cups of chicken broth to thicken it up and it's perfect every time. Last time I even left out garlic (current pregnancy aversion) and it was still awesome.

Chris's Incredible Italian Turkey Meatloaf

This has become a household favorite for us too! I always half the recipe (using 1 pound of ground turkey and omitting the turkey sausage). Sometimes I'll add a layer of cheese in the middle of the loaf, yum!

Lime Chicken Picante

We really liked this. I halved the chicken (and kept the sauce the same) and used sour cream instead of yogurt. I served with black beans and rice and it's definitely a keeper! I eliminated the butter (used cooking spray) and it's a REALLY healthy recipe!!

Spicy Garlic and Pepper Shrimp

My fiance doesn't normally eat shrimp but I made this to switch up our normal menu and he said it was a winner! I'll be making this a lot. I cooked the shrimp in fat free pam with no oil so it was really healthy. I will probably half the red pepper next time because it was pretty spicy!

White Cheese Chicken Lasagna

It was really good and a nice change from traditional lasagna. I cut down on the cheese a little bit and used cottage cheese instead of ricotta to make it a little healthier. 2 boxes of spinach was too much. There wasn't room for it and it wasn't necessary.

Green Chile Frittata

I added turkey sausage, a can of diced potatoes and topped it with cilantro and sour cream for a light dinner last night. I used fat free cheddar and cottage cheese and it turned out great.

Cottage Cheese Chicken Enchiladas

I made a few changes to make it more healthy and based on what I had on hand and we LOVED this!! I used Fat Free cottage cheese and sour cream. I also used the low fat flour tortillas, reduced the amount of cheese and extra lean ground turkey instead of chicken. Leftovers were even fantastic!! Will definitely be making this again!!

Spaghetti Pie II

Really liked this though it was more of a casserole and not much of a spaghetti crust. I used ground turkey and jarred spaghetti sauce with some garlic and italian seasoning and it was awesome!! I'll add some turkey pepperoni next time. It was really good!!

Swiss Chicken Casserole II

This was awesome! I used 3 chicken breasts and 2 cans of soup. With a few minutes left of cooking stir the stuffing mix a bit so that it all gets soaked in the soup mixture. We normally don't eat leftovers, but this was gone the next day.
