Butternut Squash Soup

Outstanding! This was a wonderful soup that didn't last long around here. I would agree to 1/2 the cream cheese. I also added 1/2 apple, nutmeg, cinnamin and a little brown suger. It worked well with acorn squash too. Next time I'll try a little milk to thin it out a bit. It is really thick and creamy. A definate keeper! Try it.

Strawberry Jam

Amazing! I used raspberries and strawberries together and it was excellent. I only used half of the sugar and it still was sweet enough. I didn't have a thermometer and used the plate test - it worked great. 15 minutes of boiling did it. Will made this again for sure. Thanks for the recipe.

Easy Batter Fruit Cobbler

Great and so easy!! Made some small changes as others suggested: only used 2 T. butter, decreased the sugar a little, used 2 1/2 cups freshly picked strawberries, and added a little vanilla and cinnamon. Served it with vanilla ice cream right out of the oven and it was gone in minutes. Will have to make more tomorrow! The kids loved it! I'd highly suggest trying it.

Honey Curried Roasted Chicken and Vegetables

Excellent!! Thanks for the great recipe. I used boneless skinless chicken breasts and it was outstanding. I also reduced the honey a bit and added some vegetable broth for consistancy. Loved the recipe!!

Key Lime Pie VII

This is an amazing pie! I was able to make the filling non-fat and it still was outstanding. Just use non-fat sweetened condensed milk and either non-fat sour cream or nonfat vanilla yogurt. Tried it both ways and couldn't tell the difference. Now I have to find a nonfat crust and it will be perfect! So yummy!

Pumpkin Apple Streusel Muffins

Great muffins but I made some changes to make them healthier. Used 1/2 whole wheat flour, cut sugar in 1/2 (can't imagine using 2 cups!). Used fresh roasted pumpkin as it is the season. Also, used fresh made apple sauce instead of oil and omitted the streusel. Also made a 2nd batch with chopped walnuts. They were great! I'd suggest using a pie pumpkin instead of canned pumpkins. It is so simple to roast one and it tastes so much better. No need for all that oil either, apple sauce works great and sweetens it up allowing you to reduce the white sugar. I will try again with even less sugar.
