Roasted Rack of Lamb

Restaurant quality!! I made a few small additions as I picked up a few things from reviews and other recipes: In a fry pan, I heated up about 2 tbsn of olive oil, threw in the minced garlic and some finely chopped shallots, added a splash of balsamic vinegar, and a smaller splash of worcestershire sauce. I added italian seasoned breadcrumbs (left out the salt) and put chopped rosemary & thyme at the end. Stirred it up a bit, and set it aside. Turned out SO GOOD!

Garlic Asparagus with Lime

I definitely had to cook the asparagus for longer than the recipes suggests, and I ended up cutting them in 1/2 in the pan. Using a large enough pan for the spears to fit is crucial, it helped in preventing the shallots & garlic from burning. Maybe it was the lime, but I couldn't quite taste the lime flavor, I think next time I'd use 1/2 lime..or more.

Beer and Brown Sugar Steak Marinade

Orzo and Tomato Salad with Feta Cheese

Turned out to be a tasty side at a potluck, but the texture felt a little greasy for my taste, leaving it tasting less 'fresh'. I would definitely use less oil next time.

Balsamic Bruschetta

Makes the perfect light appetizer/snack! I took the advice of others & threw in an extra handful of parm, just because i love cheese. I also toasted the bread w/ a drizzle of olive oil & a sprinkle of garlic powder, dried basil & parsley. Irresistable! Thank you!

Sloppy Joes II

I followed the advice of other reviews and added a little bbq sauce & worcestershire sauce & it gave the sauce a much more 'grown up' flavor from the canned variety...very yummy!! especially with some shredded cheddar on top. NOTE: 1lb of ground beef will NOT feed 6 people. Maybe my eaters have larger than normal appetites, but I had to run out and get an extra pound of meat to make enough for a proper 'sloppy' looking joe.

Garlic Broccoli

DELICIOUS! Had to use balsamic vinegar because thats all I had, but it came out so yummy! The garlic flavor was pretty strong, but i love garlic so i didn't mind so much. If you're not a garlic lover, I'd reduce the amount of garlic to your taste. Next time, I would cut back on the olive oil to 1/4 cup, after letting it sit in the fridge for a couple hours, the oil congealed a little and left a funny texture.

Orzo with Parmesan and Basil

Great recipe! I didn't have fresh basil on hand, & used about 2-3 tbspns of dry basil (depending on how big a fan of basil you are). The easiest side dish to throw together & compliments beef, chicken, pork, fish..you name it! Thanks!

Quick and Easy Alfredo Sauce

Not to sound repetitive, but this was so 'quick & easy'. And to agree w/ other users, it does taste better the next day. I usually use the leftovers over some grilled tomatoes for brunch.

Tartar Sauce I

I strongly recommend preparing this in advance, letting it sit in the fridge overnight makes a big difference. Thought it tasted too much like mayo at first, but the next day, it was perfect!! Plus, if you make too much, it's good for at least another 2 weeks or so, as long as you keep it refridgerated.

Hot Artichoke and Spinach Dip II

You can not go wrong w/ this recipe. I took the advice of other reviews & substituted 1/2 the mayo for sour cream, played w/ other cheeses, & squeezed 1/2 a lemon in...it tastes just like restaurant style dip. Perfect for potlucks! I've been recieving multiple requests to make oven ready batches for people. Thinking of charging them a small fee. =)

Skillet Fried Corn

Tasty, but a little heavy for my preference. I think next time I'd try draining the bacon grease as others have suggested. Also didn't turn out as "fried" as I thought it would be.

My Crab Cakes

The best! I can't count how many compliments I get on this recipe! I sauted both green & white onions, as well as a little bit of garlic. I also added a bit of the Old Bay seasoning into the breadcrumbs when coating the patties. And as per the other reviews, I usually double the recipe, because people are always fighting over the last one! This recipe is surely a keeper.

Goat Cheese Stuffed Tomatoes

This recipe was so easy! I've tried this for a number of potlucks & everyone is always impressed on how 'gourmet' it looks & tastes. I topped it off with a bit of shredded asiago & it was always the first plate at the potluck to be finished. Thanks! (BTW, the recipe amount was just right with the 'fresh tomatoes', the ones sold w/ the vine.
