Crisscross Salad

Cottage Cheese Chicken Enchiladas

I have been making these for the past 6 months and just love how many variations you can do with these. I always use Costco chicken and sometimes I add black olives, or black beans to the meat mixture, I also add 1/2 c cilantro to the cottage cheese mixture and 1/2 c of salsa to the chicken mixture for more flavor. This is one of my favorite recipes from this site.

Beef and Mushroom Stroganoff, Aussie Style

I took advice of other review and skipped curry added pepper/garlic salt/added 1/4 c red wine. Also used 12 oz pkg white sliced mushrooms and used 1 cup cream & 1/4 cup sour cream. Added 1 Tablespoon worcestershire sauce at end. Serves over hot noodles and it was amazing!

Bourbon Whiskey BBQ Sauce

This is the 2nd time making this is an excellent recipe. This time I wanted more kick to the sauce and added 2 Tablespoons of ghost pepper salsa and it was perfect! One of my most requested recipes...love it!

Baked Kale Chips

By the time the 2n batch was done the first batch was already eaten. I took the advise and baked at 300 degrees for 15 minutes and it turned out perfect. I used sea salt, garlic powder on one batch and smoked paprika on another both excellent!

Eggplant Supper Soup

Loved this soup I did not put any meat but put 1 yellow zuchinni, 2 bay leaves, 1 teas. basil/oregano and added 1/4 c. red pepper. I did not use pasta but added 1/4 c brown rice. Super healthy recipe and great flavor! Definite keeper.

Restaurant-Style Buffalo Chicken Wings

Excellent recipe I have made these 3 times now and each time perfect! I add 1/4 cup of cornstarch to the flour for extra cripiness and garlic powder. Hint you can reuse the oil after frying these store in container in refrigerator until next use.

Cilantro Tabouli

I think this is a great basic recipe for taouli but by adding 1/2 c chopped greek olives and 1/2 c of diced cucumbers it adds some more flavor without the added seasoning!

Super-Delicious Zuppa Toscana

This was the best soup ever, I used 2 hot links of Chicken sausage and 1 Mild link of Chicken sausage. I also used Kale but honestly the flavor was fantastic I made this recipe twice alreaady.

Crawfish Chowder

I love this soup it is rich and creamy and wonderful. I used 1 pound on large raw shrimp and 1 pkg. of mixed seafood frozen 1 lb (Vons). I also added 1 cup of potatoes o Brian frozen to the mix. I used 2 cans of cream of mushroom and one can of cream of chicken also added 1/4 c of red/green pepper.

Sopapilla Cheesecake Pie

I have made this twice in less than 2 weeks cannot get over how easy this is to make and great tasting. I added 1/4 teas. of nutmeg and cinnamon to the cream cheese and omitted the honey. I used brown sugar with butter for the topping and do not overmix otherwise it will turn to mush. Loved the results!

Pad Kee Mow (Drunkard's Noodles)

Excellent recipe I used dried rice noodles and regular basil instead of Thai. I used lemon in place of lime and followed the recipe as illustrated. I was completely surprised how wonderful the flavor of this dish turned out! Will be making again.

I thought I would try this recipe based on the reviews and I was pleasantly surprised how wonderful this was. I made exactly the way the recipe stated and topped with avocado slices and crushed tortilla chips. I will be making this again perfect for a crowd.

Banana Bran Zucchini Bread

My husband eats a bran muffin every morning and I thought this recipe would be a nice change. He loved it! I substituted 1/4 c of applesauce instead of pumpkin and added 1 more mashed banana , 1 c of raisins and followed the rest of the recipe. It was very moist and dense.
