Zucchini Cakes

5 stars after second batch made with 1/2 teaspoon Old Bay. 1 tablespoon of Old Bay made the dish very salty.

Spritz Cookies

Not very sweet and a bit dry. Dough went through my press nicely. These cookies will look nice in a assorted cookie basket, though I'm not sure they will be a favorite.

Fried Artichoke Hearts

I used artichoke bottoms and they worked and tasted great. I finished this dish with freshly grated parmesan cheese and a squeez of fresh lemon juice. I will make these again!

Cheesy Tuna Noodle Casserole

Very good! I used 1 10oz can of chicken instead of tuna and added green peas and diced carrots. I used a can of cheddar broccoli soup, 1/2 cup milk, a few shakes of garlic powder and 2 tbls of reduced fat mayo. Not really the recipe but I did use it as my base. No regrets!

Cucumber Crab Snacks

Well...I did not add crab. I did add chopped chives and garlic powder with a pinch of sea salt then finished with a small bit of roated red pepper.

Cream of Mushroom Soup I

Fantastic Soup! I did make a couple of changes. I used beef stock and about 1/2 cup of sherry, 1 tbls is not nearly enough. I also went heavy on the black pepper and added some "Essence" to give a touch of heat.

Chipotle Sauce

Apricot Chicken with Balsamic Vinegar

I didn't have dried apricots but I did have 3 fresh peaches on hand. I also used fresh sage. It's a keeper! Balsamic and fruit are a great combo.

Carrot Pineapple Cake I

Very good carrot cake. I only added 3/4 cup of sugar knowing I would frost the cake with a sweet cream cheese frosting. I also did not drain the pineapple. the cake came out nice and moist but not too moist.
