About this Cook
I love to cook. I don't cook as often as I would like but when I do, I find it relaxing. I also find that I am taking more risks and not simply following recipes. I let my tastes dictate what spices I will use.
My favorite things to cook
Dessert. I love to bake. My favorite things to bake are cakes, namely 7-up cake and lemon pound cake. I also like sweet cornbread, biscuits...everyting you have to eat in moderation (:. I also like rice and pasta dishes.
My favorite family cooking traditions
Sweet potato pie and baked macaroni and cheese at end of the year holidays. yummy!
My cooking triumphs
I made vegetarian cornbread stuffing for the first time last thanksgiving. I used a combination of 3 recipes, thus creating a new recipe. The first batch went in the trash. But the second, with a little tweaking was delicious.
My cooking tragedies
With baking there can be many tragedies. I tried to make an oven baked pancake from a recipe that I got from all recipe. It just did not work out. I think it was a combination of the pan I used and not quite understanding the directions. Anyway, I never tried it again.

Egusi Soup
Good recipe. I am vegetarian so I used morningstar crumbles instead of meat and seafood. Cooking time is drastically reduced. If you use this method, you will want to put the crumbles in after the sauce and heat no more than 10 minutes. Also, I chopped the spinach in a food processor and I used olive oil instead of peanut oil. Yummy

Vegetarian Gravy
Great recipe. I've been working on a vegetarian gravy recipe and there always seemed to be something missing. This was simple and good. I took the suggestions of others and eliminated the salt. Also, since I like a little kick, I used a few shakes of Hot chile oil and a teaspoon of fresh ginger. Finally, I used 2 vegetarian boullion cubes w/ 2.5 cups of water instead of broth.
