Somerset Pork with Cream and Apples
Living in the UK made me anxious to try this with local ingredients (we actually live in Somerset). I do agree that it was bland even with local dry cider (much different from what you get in the US). Less cream might solve the problem but to the sauce just didn't have a lot of taste even with three different types of fairly tart apples (Cox, Braeburn & Delicious) and the dincredibly strong onions they have here. The pork however was extremely tender and my kids like it (passed on the sauce completely after the first taste). Probably won't make it again.

Perfect Berry Shortcakes
These are excellent... just the right blend of softness in the middle with a bit of a crisp edge and the perfect amount of sweetness to set off whatever berry you serve them with. My children are my biggest critics and there are never any left over when I make these (they'll eat them the next morning for breakfast with jam). I don't bother with the grating of the butter (can be pretty messy) but just let it soften a bit and use the pasty cutter. Or the two fork method works well too.

Neat Sloppy Joes
Very easy and since it can be made ahead it's even better! Like other people I tweaked the basic recipe a bit and my children loved them (so much my son wanted the last leftover bit for breakfast). Used equal amounts of celery (chopped very fine) and onion plus a bit more vinegar (I like them pretty tangy). We currently live in the UK so the canned tomato soup over here is much sweeter than what is typical in the US so didn't need quite as much brown sugar but that's a taste and see kind of personal preference thing. Served with a chilled pasta salad and some crisp veggies and we had a nice summer meal. Definitely a keeper for my cookbook.
