Crab and Swiss Quiche

I need to re-try this another time. I don't know if it was the cornstarch I used or the fact that it was imitation crab meat vs. real. I'm also not sure if I like Swiss as the choice of cheese. It was very, very runny. I will re-try another time & post.

Banana Milk Drink

The cinnamon makes this! I modified it a bit. I used a little bit of coconut mixer for my "sugar" instead of regular sugar. I nixed the vanilla extract & added vanilla protein powder instead. It was so delicious!

Different Chicken Divan

I used 2 cans of Cream of Chicken b/c I didn't have Cream of Mushroom. I used fresh mushrooms instead. I used Monterrey Jack & Parmesan/Romano Cheeses instead of Cheddar (what I had on hand). I left off the french fried onions. I added a bit of milk to the mayo/cream of chicken mixture. The spices were what made this so tasty.

Chicken Quesadillas

I made these along with the veggie fajitas. They were quite tasty. I would say you don't have to have the bacon bits. I used the "real" bacon bits though and overall they were great!

Excellent! I added mushrooms to mine. I can see coming up with all different kinds of versions. This was my first time making fajitas & I got compliments so it was definitely a great recipe!

Brown Sugar Meatloaf

Delicious! I used Splenda brown sugar and did a bit on the bottom of the pan AND as a glaze w/ the ketchup on the top. It was quite tasty. For some reason my meatloaf wasn't very loafy though. Not sure if I had too many liquids or not enough meat.

Summer Squash Casserole

My husband gave it 4.64 stars. Ha. So almost 5. I thought this was a very delicious recipe. I will definitely make again. If you use low fat ingredients its a bit healthier (obviously). Creamy & delicious!

Surprise South Beach Mashed 'Potatoes'

Fabulous! I've made another version of these before but they didn't turn out as good as these! My non veggie eating husband loved! I did NOT microwave my veggies though...I steamed them w/ a wok.

California Grilled Veggie Sandwich

I've never made anything like this before at home so I wasn't sure it would turn out as good as a restaurant veggie sandwich but it was!! So easy too! Its too cold to cook on the grill this time of year so I grilled my veggies on the George Foreman. I used a whole wheat mini sub bread also b/c i couldn't find Focaccia bread.

Wild Rice Casserole

I modified this a bit based on the ingredients I had. I used ground chicken only vs. both chicken breast AND pork. I used Health Requests Creams of Mushroom, Chicken and Celery. I did not have celery. I also used regular rice vs. wild rice. This is a great, easy, low cost recipe that is very filling and can be easily modified.

Very yummy. I am not sure a whole onion is necessary. I also might have overdone it on the cilantro. I can never find Cannellini Beans, so I subbed Garbanzo beans instead.

Quick Chicken with Asparagus and Provolone

This was a great recipe, so quick and easy. However, if I had it to do over again I would have gotten FRESH asparagus and just let it cook longer in the broth. Soggy asparagus is nasty. Also maybe I would have gotten better provolone. I just used some regular packaged sliced kind. I will definitely make again though. The chicken was so tender I didn't need a knife to cut.

Zesty Chicken Meatloaf
