Hurricane Cake

Awesome! Some modifications... I used only one stick of butter and melted it with the cream cheese in the microwave. I used 4 cups of confectioners sugar. The recipe I had said to bake for 45 minutes and I used the convection setting on my oven and it was perfectly done at this time. When it cooled, I also melted Ghiradelli chocolate over the top.

Awesome Sausage, Apple and Cranberry Stuffing

This was a huge hit and different from traditional sage/bread stuffings. I used sour dough bread. I made mine the day before, following other users and just reserved the liquids for before baking. I did not bake mine in the turkey because we fried ours, but I did 40 minutes covered at 350 and 15 uncovered. For leftovers, I think this is the perfect candidate for something I saw Rachael Ray do with leftovers. If you have a waffle iron, butter both sides and put the stuffing in the iron and cook a stuffing waffle. She topped it with leftover turkey which had been re-soaked in stock and topped that with cranberry sauce, which she combined with maple syrup (2 parts syrup to 1 part cranberry sauce). Looked super delicious.

Bovine's Corn Pudding

This recipe is SOOOO good. Very similar to the actual Bovine's. This is the third time I've made it and this time I cut out about 1/2 a cup of sugar, because my mom thought it was a bit too sweet. It didn't make much difference & was still a very popular dish.

Homesteader Cornbread

I normally do another cornbread recipe on here, which is so moist, it's almost like a dessert. I was looking for something that was a little dryer and pair better with chili. This fit the bill perfectly. I also cut up the leftovers & made it as the base of a breakfast casserole the next day. Very tasty.

Christmas Breakfast Sausage Casserole

This was very good. I didn't notice until after the fact that it needed to be left overnight. While the casserole was good when I cooked it the same day, I think an overnight soak is definitely what it needs to hold the flavors together.

Easy, Cheesy Zucchini Bake

My zucchini didn't cook as much as I would have liked, so I would say cook time 30-35 minutes, then uncover and top w/ cheese, bake another 50-10. I don't know if it was the dish I used (pyrex circular), but after 25 minutes, it was cooked but not HOT. The taste, however, was delicious!

Spicy Mexican Torte

Overall, very tasty & spicy! I had to modify this recipe a bit b/c i didn't have a 10" pie pan. I had a 9". That didn't make a HUGE difference, but I thought the ingredient amounts were WAY to much for even a 10". With these quantities, I believe you could get away with making 2 tortes (using 2 pie plates). OR you could halve the recipe. I only made one torte but I definitely had leftover sausage mixture. Because of my pie plate size limitations, I could not use 2 tortillas on EVERY layer. Instead I only used 2 on the bottom, which I figured needed to be sturdy. If you are making 2, I would do it like this: Line (2) 9 or 10" pie plates with 2 tortillas Sprinkle sausage mix on tortillas Sprinkle cheese over sausage mix Cover w/ a tortilla Spread refried beans over the tortilla Cover w/ a tortilla Put 6oz of roasted red peppers on tortilla Place another tortilla on top. If you have any sausage mix left, then top w/ that and more cheese or just top w/ a little cheese. * I only made 1 torte and I used 1/2 pound chorizo combined with 1/2 pound ground beef and I still have a little over a cup of the mixture left, so you could definitely halve this recipe if you are only using one pie pan.

Zucchini Casserole II

I modified this a bit. I only had 2 zucchinis so I just used them diced and halved the rest of the ingredients, minus the bread stuffing mix. I'm not sure if the stuffing mix would have made a huge difference or not? I liked the way the sour cream/cream of mushrooms tasted. I didn't saute anything before hand, but it actually made the zucchini a little crisper which I liked. Next time I try it, i will saute the onions and carrots first, then add the zucchini last.

Spaghetti Pie III

YUMMY! I did a little something different w/ the sour cream mixture since I didn't have cream cheese on hand but it still turned out well. I used spinach spaghetti instead of regular noodles. We really liked this and it was easy to make.

Absolute Mexican Cornbread

I thought this was great. I appreciated the moistness of the cornbread. There is nothing worse than super dry cornbread that you choke on. This was def. not a healthy recipe but DUH you are eating CORNBREAD. As a once in awhile thing, it's just fine.

Cobb Sandwich

I modified this just now b/c I didn't have all the ingredients. I LOVE avocado but didn't have any on hand. I used a low carb tortilla wrap instead of bread and used turkey instead of chicken. I didn't have lettuce, so I omitted that. This was delicious. I can't wait to try it again in a wrap + lettuce/avocado!

Beef and Parmesan Pasta

I cooked the pasta separately, so in the future if you do that, you won't need as much stock. I also added a ton of spices b/c it would have been really bland w/out it. I used garlic, salt, pepper and oregano. I used a mixture of Parm and Chedder cheese as the topping also. It was pretty good w/ those tweaks.

Broccoli Chicken Divan

My grocery store didn't carry Cream of Broccoli so I went with the Campbell's Broccoli soup instead. I normally make this recipe with 2 cans of Cream of Mushroom and it was a little drier than my normal recipe but still tasty. I could say to maybe use 1.5-2 cans of the soup + milk mixture if you want it more casserole-y.
