Shirred Eggs

I like this recipe, but I have had some problems with this recipe in that the eggs aren't done enough or they are too tough. To solve this problem and make them perfect I first set the ramekin with the butter and cream only in simmering water. When the cream is hot, I break the eggs into it and put just a little cream on top of the eggs with the cheese. Then I place in the oven. This process helps to cook the eggs evenly and gets them just right. Hope this helps anyone who has had the same problem I've had.

Potica

I live in Slovenia (for 11 years) and speak the language. I also have a Croatian heritage and my grandmother made potica. Just for the record, the correct pronunciation is po-tee-tza. This recipe is really authentic. It is traditionally made for Christmas and Easter.

Chocolate-Mascarpone Phyllo Triangles

I live in Europe (have for 15 years) in a country next door to Italy where they use mascarpone cheese and phyllo dough all the time. Maybe I can help everyone with the leakages problem. I have never seen anyone try and make separate triangles or squares with phyllo dough. It is always used in a pan and then cut later. Even though I haven't tried this recipe yet, when I do, I will layer the bottom of a pan (15x11" or 9x13") with 3-4 sheets of phyllo (brushing the butter in between each layer). Then spread the filling over the layers and finishing with 3-4 more sheets of phyllo brushing the butter on the top, as well. The baking time will probably vary. Once it's baked, let it cool completely then cut in squares or, as they like to do here, cut diagonally to the right and then the left making diamond shapes. Hopefully, this will work. If anyone tries this before I do, let me know how it works. Hope this help! I finally tried this recipe and made it the way I suggested above (keeping the filling exactly as written). It turned out just fine as far as the consistency and everything holding together. But next time I will NOT add honey, but will, instead, add brown sugar and cinnamon. One other thing, make sure you beat the mascarpone REALLY well so that it's nice and fluffy. That will make the consistency much better.

Sweetened Condensed Milk

I ran out of sweetened condensed milk and needed something in a hurry, so I looked here. After using this recipe I don't want to ever buy sweetened condensed milk again. I'll just make it! Just be careful because it gets really thick quick.

Pumpkin Roll Cake

My mother gave me this recipe years ago. It is soooo good. The only difference in her recipe is that there is 1 tsp. ginger added. I also don't use 1 c. of conf. sugar. I think that's too much, so I use 3/4 c. The secret to rolling the cake is to make sure you don't over bake it. Otherwise, it cracks and breaks.

Cheese Borek

Where I live (Slovenia, and all over in the Balkans) this is called burek. It's usually rolled or can be baked in a round pan like a pie. This recipe is a different take on the burek I know (which can be with cheese, meat, potato, spinach). This is a great meal, especially if you have plain drinking yogurt with it. Yum!

Cold Green Bean Salad

This was very good and everyone really liked it. Although, I did NOT use canned green beans. To make it more healthy I used frozen beans and steamed them in a small amount of water, then placed them in a serving bowl and added the rest. I also make my own Italian salad dressing: 1/2 c. olive oil, 1/4 cup balsamic/apple vinegar mixed; then I add to taste garlic powder, salt, pepper, oregano, and basil. I took this to a friend's house for lunch and everyone (even my children) commented on how good it was.

Layered Pasta, Veggie and Cheese Skillet

Great tasting dish that is easy! The only thing I did differently was to make my own Italian sauce. It's so easy and you don't get all the extra preservatives they add to a jar. It's fresh! I didn't add the water either. I will continue to make this dish, especially when I need something quick and easy.

Bountiful Turkey Avocado Salad

This is a very healthy salad that really tastes great! The fruits, vegetables, and dressing blend together perfectly. I added spinach leaves to make it even more healthy. It's a great salad to serve to guests because it is so attractive. This is a keeper in our family!
