King Crab Appetizers

Super good! Took others' advice and used the phyllo tartlets in the grocery store freezer isle, for a time saver. (And to be sure we like the filling, before we make them again for New Year's Eve!) Very rich and perfect. I used a small melon baller to portion each scoop into the mini phyllo tartlets. Bake for 20 mins and they're perfect! I had some filling left over after filling 15 tartlet shells, so I would say you may get 22-25 if you also use the minis? Just a guess.

Awesome and Easy Creamy Corn Casserole

Awesome! Go into to it knowing this: if you are expecting or wanting a creamier texture, make sure you don't use the 8.5 oz corn bread package....us the 6.5 oz. I read the other reviews prior and left out about 2 ounces of my 8.5 oz box when making this....perfect!! Still had the corn bread-ish texture but still creamy enough. I would have been bummed if it came out like corn bread. Other than that, followed the recipe to the ingredient.

Pumpkin Cheesecake in a Gingersnap Crust

Absolutely perfect! The only struggle I had was with the crust, but that was my issue. I used ginger snaps and the brown sugar/butter mix, no nuts. Maybe the nuts would have helped alleviate the toffee-like crust that was nearly impossible to cut through. :( But no cracks!! (used a small water bath below) BIG TIP: be sure to place the spring form pan on a cookie sheet...it leaks for sure. But the flavor and consistency was perfect....not too sweet, just right.

Peanut Butter Balls II

AMAZING!!! I cut the confetioner's sugar down to 2.5-ish cups and they taste exactly like Reese's peanut butter cups!! YUMMY and a huge hit in the office!!!! Thank you!! :)

Leg of Lamb

Love this!! I used a 1.5lb leg of lamb (only 2 of us) and cooked it for 40 mins, which gave me a med rare piece of meat. My mother always made lamb for Easter and she passed away before I could get her help with my first attempt at my own lamb dinner. Although the gravy didn't turn out for me (I had to throw it out), I can only blame that on myself. The lamb was perfect!! I've made it twice now. Thank you for helping me to bring back the flavors of home, in the absence of my mom. :) BTW....mint jelly makes it even more amazing!

Simple Carnitas

I was craving carnitas and didn't want to fight the cliche crowds, on Cinco de Mayo. This was AMAZING!!! I saved the broth, thickened it with a tablespoon of corn starch, brought it to a boil, and spooned a bit over the meat....after i shredded it, and placed it under the broiler for about 5 mins, to crisp the edges. I have to say, this may be WAY better than what I remember having in the restaurants...and I live in Northern California, so Mexican food is pretty accessible here. I followed the recipe exactly (but added one extra orange, because mine were small), my pork shoulder was approx 3.15lbs, and there were only 2 of us...we have enough for approx 1.5 more dinners for the 2 of us. My husband had 3 small soft tortillas as tacos and I just had meat. Maybe it shrinks....maybe we eat a lot. But it was AMAZING!! Thank you so much for sharing!! :) Feliz Cinco de Mayo!!

Easy OREO Truffles

FANTASTIC!!! I used Nutter Butter cookies and Nestle semi-sweet chips, melted....and they came out delicious! Dropped each ball into the chocolate, rolled around with a wooden spoon to coat and removed with 2 forks. Easy peasy!! Thank you for this awesome idea!! Happy Holidays! :)

Crispy Herb Baked Chicken

This was great....used butter flavored herb instant mashed potatoes and mixed in some grill seasoning and crushed red pepper flakes. Used boneless/skinless chicken breasts...2 dipped in the butter and 1 sprayed with butter flavored cooking spray (for me since I'm cutting back on fat) and all turned out delicious! I'm sure if I'd sprayed them all, they wouldn't have noticed! None were extremely crispy, but enough to be delicious. Thank you!!

Fantastic Lemon Butter Fillet

This is perfect! I actually just add all ingredients and bake...I don't make a sauce, because the flavor bakes in. I also add a dash of white wine and layer tomato slices over the fish when baking. Thank you! Easy peasy! :)

Country Green Beans

Fantastic!!! I had 2 cans of french style green beans and needed a side dish tonight....quick! I used deli ham and it turned out delicious! I didn't add water...just used the liquid from the can. Thank you for helping me to avoid a trip to the market! :)

Easy Garlic Chicken

Delicious! We're on a low carb diet, so I substituted grated parm, only on the top, in place of the bread crumbs. Also used another reviewer's idea to add some crushed red pepper flakes (very little)also parsley flakes and a smidge of Italian seasoning. Fantastic flavor! :)

Seven Layer Salad

Fabulous!!! I used real bacon bits from a bag..one pouch was perfect. I will use scallions instead of red onions next time....it will make it a bit milder, since many people were picking through the onions. I'm an onion fan, but it was still a little too much for me. But what amazing flavor!! :)

Clark's Quiche

This is the perfect symphony of ingredients for a delicious quiche!! I have made it 4 times now, and I do have to agree that 3/4 of the cheese mixture is more than enough and overflow is almost always an issue....so be sure to place on a foil lined cookie sheet. That could just be the result of different pie crusts...I used a 9 inch deep dish Albertson's brand all 4 times. Also, I used fresh chopped parsley instead of dried, and it looks beautiful! Look for my uploaded quiche photo. No need to use olive oil to soften onion...just use the grease from the bacon...MUCH better flavor! In the end, the ingredients come together for an amazing taste! Love the sour cream toss with the spinach (or I used broccoli once for a change...delicious!) Now I'm getting requests for this in place of Birthday gifts!!! Thank you, Clark!! :)

Broccoli Cheese Casserole

DELICIOUS!!! Made exactly according to recipe EXCEPT I followed the suggestions of other reviewers and doubled the rice to one full cup in 2 cups of water....it was absolutely perfect!!!! Not too dry..not too wet...just PERFECT!! Thank you for the new addition to my side dish collection! :)

Country Chicken Casserole

So comfort and delicious! Used frozen hashbrowns, can of cream of celery(all I had handy)and added 1/2 cup sour cream when I added corn to mix...other than that, followed directions to a tee, and it was wonderful!!! Oh yeah...did take the chicken out for 5 minutes at the end and broiled the rest to brown potatoes a bit...my husband loves the crispy stuff! Super comfort food!!! No need to cook hashbrowns first if you follow the directions...even if they are frozen.

Pineapple Chicken Delight

This was quick and easy...chicken comes out tender from pineapple juice, tastes like sweet barbeque chicken...maybe cut back on the barbeque sauce. But I can't say it was phenominal. I agree with another rating that says it would be better with different cuts of chicken. It worked in my limited pantry night pinch. Thank you for the suggestion!

Chantal's New York Cheesecake

I followed this recipe to the T and came out with a HUGE crack in the middle which almost separates the cake in half. But I had to come back and re-rate with 5 stars....the flavor is perfect!!! I think maybe someone just slammed the door while I was baking...I will try this again!!
