About this Cook
I work full time and I'm a part time student. My 2 children are grown but attend college and still live at home. I LOVE to cook and bake, especially when I have the time to do it right. It's tough to do much cooking on weeknights but sometimes on weekends I spend the whole day in the kitchen. I consider cooking my hobby and nothing makes me happier than having guests for dinner. I love to experiement with new and different recipes. Just need to make sure I've tried them out on my family before serving them to guests :0)
My favorite things to cook
Anything Italian or Mexican. My specialties are homemade pasta with sauce and meatballs, lasagna, chicken or seafood enchiladas. I also love to bake, just about anything. Pies, cakes, cookies, etc....just need to make sure I don't eat too many of my own goodies.
My favorite family cooking traditions
My mom passed away a few years ago but one of my fondest memories is helping her to bake oatmeal raisin cookies when I was a little girl. I've passed the tradition down to my son and daugter. They are adults now but still live at home and if I bake cookies without them there to help, boy do they get upset with me.
My cooking triumphs
My parents have passed on but my husband's parents are still with us. They are not really into cooking so I usually have holiday meals at our home. Since I love to cook and bake this is always a chance for me to show off. One Christmas I made a garlic roasted prime rib that they still rave about to this day. I also make a darn good cheesecake, if I do say so myself. I think I missed my calling, I should have been a chef or a baker.
My cooking tragedies
The first time I tried to make homemade rolls was pretty memorable. I was 18 and had only been married for a month or so. My husband is a bread lover so I decided to bake him some home crescent rolls. I think that maybe I used a little too much yeast. When the rolls came out of the oven each one was the size of a small loaf of bread. They looked like footballs. We tried to eat them anyway and my husband told me they were great, but I knew better. Yep, definitely too much yeast. My hubbie and I still laugh about it sometimes now, 27 years later.

Beef and Noodle Casserole
Not a gourmet meal but deserves 5 stars in my book. It it not only tastes good but it's quick and easy. I added a little chopped onion and some italian seasoning while the ground beef was browing. I only had 1 can of tomato soup so I substitued a can of golden mushroom for the second can of soup. I also substitued red wine for the sherry. I baked it in the oven as directed and it didn't come out dry at all. Great recipe, thanks for sharing!

White Russian ..Because Joe Perry Drank Them!
I love white russians but these were a bit strong for my taste. I added a little more cream and they were good.
