Blueberry Ricotta Squares

This recipe was superb! It was moist and delicious. The only changes I made were to use frozen blueberries and 1/2tsp of lemon juice since I didn't have any lemon extract. A keeper for sure.

Beth's Spicy Oatmeal Raisin Cookies

This recipe is wonderful! The aroma of spices and cooked oatmeal is tantilizing. I did use regular shortening instead of the butter shortening and 4 cups of oatmeal. The cloves is a great touch. I did exactly as mentioned and cooked for 11 minutes, cooled 2 minutes. The cookies were moist yet had a cookie texture. The extra oatmeal made them easy to shape. WILL make this cookies again..thanks!

Chicken Pot Pie IX

Recipe was very tasty and easy to prepare. Made a few changes to suit our tastes. Omitted sliced celery, and used drizzle of olive oil instead of butter. Added 1 tsp of garlic powder and cayenne pepper. Used 1c of sliced white mushrooms. I also did not use pie shells..I used a bisquick topping and doubled the recipe for the size of my casserole dish. It came out wonderfully. Thanks!

Best Peach Cobbler Ever

This was a very easy recipe to prepare when short on time. Next time I would cut the amount of sugar probably by 1/2. I found it very sweet, the peaches already have a sweetness to it so adding a cup was too much.

Chinese Chicken Fried Rice II

This is a great compliment to take-out chinese rice. Did not have chicken so made it without and it still tasted wonderful! Making sure rice is cold throughout is key to this recipe. A keeper.
