Caramelized Chicken Wings

The only reason I am only rating this at 4 stars and not 5 stars is because the sauce is SUPPER SWEET. I am going to play around with the amount of sugar & honey, but the overall flavor is great. I ended up using chicken breats (rather than wings). I cut each chicken breasts into 4 pieces and cooked the chicken in the sauce for about 15 minutes. Took the chicken out of the sauce (covered to keep warm) and then cranked up the heat, for about another 10-15 minutes, to thicken the sauce (be sure to stir more frequently as the sauce gets thinker).

Braised Balsamic Chicken

I rating of the recipe is a bit missleading... most people are NOT following the recipe as it is written. I followed the recipe as is and it does need tweaking. Read other reviewers to help you decide what would be best for your version. My #1 recommendation is to use WHITE balsamic vineger (if you have a Trader Joes you can find it there). Also, the herbs are slightly too much you can cut back a little on the amount of each.

Simple Turkey Chili

This is a good recipe to start with if you are trying to figure out what kind of chili fits your family... make your tweaks based on this recipe. My husband wants to double the beans (and don't mash them) and reduce the tomatoes in half. There are not a lot of other "flavors" going on in this chili... other than chili. Check out the "Bilermaker Tailgate Chili" for other things you can add for a more well-rounded flavor.

Parmesan Knots

As with other reviewers I am going to recommend butter and not veggie oil. I am also going to recommend only 1 tsp of oregano if you are using ground oregano (vs. flakes). And rather than adding the the parmesan chees to the butter mix I would sprinkel it on the knots after you have bushed on the butter mixtur. Clean up is easier and the cheese doesn't get clumpped up in the nooks of the knot.

Chicken Casserole

I'll admit... this was a good recipe to clean out the pantry and therefore I did do a few substitutions, but I still don't think this is a keeper. A little to bland for our tastes. We are not big pepper eaters so that might have contributed to the bland taste, but I would recommend adding your favorite herbs to the dish - garlic would be a good choice.

Chicken Zucchini Bake

This is not a keeper for our family. Unlike another reviewer I found this recipe to be slightly on the watery side. I did add milk to the egg mixture per another reviewer (skip it). I also believe another factor in the moister is the zucchini. Every time I make zucchini bread I press as much water out of the zucchini as possible (there is not a step or recommendations on recuding moisture coming from the zucchini). I would recommend reducing the amount of zucchini as well as pat dry the zucchini slices. Another factor that we didn't care for is the bottom "crust" which had soaked up part of that moisture. One thought would be to slightly pre-bake the "crust" before adding the contents.

Risotto with Tomato, Corn and Basil

This recipe is labor intensive for a side dish. If you want to give it a go make sure your main dish can be popped in oven and left on a timer. The the recommendation of other reviewers and use chicken broth instead of water. Bump up the cheese if you like it really creamy. Also, be sure to use a fresh tomato. Canned tomato turns the rice pink (even if you drain the juices).

Greek Pasta Salad I

This was a hit with our guests. To make it a bit easier on grocery shopping this is what I found: 1 standard size container of mushrooms, 1 red pepper (slightly less), 1 standard size container of feta cheese & 2 bunches of green onions. If you are a fan of one or more of the salad ingredients feel free to add a just bit more (but don't go crazy). There is enough pasta to balance it out.

Honey Bun Cake I

Couldn't decide if this was a 4 or 5 star... my husband gave it a 5, for me it was a 4 just based on preference. The one recommendation - don't bother with the frosting... the cake is plenty sweet without the frosting.

Red Velvet Cake I

My husband wanted Red Velvet for his 40th birthday. He gave this recipe a big thumbs up. Added bonus - easy to make a 1/2 a recipe for a third layer for a larger cake.

Cake Balls

I hate to be a "Debbie Downer" but this recipe isn't as great as it sounded. I found that the cake/fosting combo is a bit too mushy (texture) and I really couldn't taste cake or the frosting (some kind of taste combination between the two). Additionally after dipping 1/2 a dozen cake ball into chocolate I ended up tasting more chocolate than cake (for the remaining balls I just dipped the bottom half). The result was edable but after all the extra work of making the cake balls and dipping them in chocolate I'll think I just stick with mini-cupcakes for my finger desserts.

Orange Cake

This gets 5 stars but only by following other reviewer's recommendations: Vanilla cake mix, vanilla pudding, orange extract and traditional glaze of confectioners sugar, milk and vanilla. To add a little something extra I added a dash of the orange extract to the glaze. Also, the cake started to dry out a bit after a few days (yes, it was covered, so you can up the veggie oil up a bit.

Sesame Pasta Chicken Salad

YUP! This one is a keeper - the best part is you can vary the dish each time with different veggies - great! Be sure to follow the recommendation of cutting the oil to 1/3 cup. The sauce is perfect belend of flavors.

Too Much Chocolate Cake

A MUST TRY. I actually got this recipe from a friend, but I just had to rate it because it one of the BEST recipes for chocolate cake. For a BBQ party rather than have a bunt cake I put the batter into a mini muffin pan - finger food - just as tasty and I didn't need to supply forks/plates.

Viva Madrid Spanish Chicken

Followed the recipe exactly... didn't hold up to all the other rave reviews. The flavor just wasn't there. I have NEVER understood why recipes tell you to bread and fry the chicken and then stick it back into the sauce just to lose the crunchy coating. DO NOT do it... either skip the flour (as another review suggested) or cook the chicken all the way (possibly in another pan). The recipe calls for two onions; you can get by with just one medium to large onion. Before adding the ONE onion cook/fry the bacon first then add the onion. The bacon will never get crispy if you cook it with the onion. Add the garlic at the end to avoid getting a bitter taste. Feel free to add more herbs or spices (another review suggested peppers) to bring in more flavor.

Bessy's Zesty Grilled Garlic-Herb Chicken

I followed the recipe exactly. What went wrong? This recipe got such rave reviews... but it wasn't anything special for me and my husband. We tasted the sweet and a slight earthy herb flavor but other than that - nothing special (not much favor). Not a keeper.

Rempel Family Meatloaf

This is a super salty recipe - with the onion soup mix, ketchup and steak sauce it is overwhelming. Other reviewers have recommended sifting out flakes and not using the rest, because of the salt content. I would say... just use dried onions instead of onion soup mix.

Annie's Fruit Salsa and Cinnamon Chips

This is actually like 4 1/2 stars (followed the recipe exactly)... the only hints that I have to give are 1) make the chips the same day of the event - my got a little chewy the next day. 2) It makes A LOT of "salsa" - have a big group or be prepared for leftovers. 3) The salsa tends to get juicy over time - if you don't care for juice you'll need to drain it off.

Baja Sauce

As with a few other reviewers the "all mayo sauce" was a bit heavy. After talking with a few other people the next batch will replace the mayo with sour cream. I put sour cream on my tacos anyway... and I discovered that a local Mexican restaurant uses sour cream in their sauce.
