Amazingly Easy Irish Soda Bread
Loved it! I wanted it a bit more like irish brown bread & it was much moister than anything I'd ever had, thank you! used the kitchenaid w/ bread hook for the kneading, so easy. I did 1 C. whole wheat flour & 3 C. white, and no buttermilk, so I used 1T. white vinegar to the 1 and 1/4 C. 2% milk. Great idea to baste it w/ melted butter & the milk while it baked; baked it at 350 for 1 hour & 10 or 15 min. Made for an office st. patty's thing on Fri. & served it w/ butter & marmalade, everyone loved it!

Eggplant Tomato Bake
Loved this! needed to use a tub of Ricotta; I oven broiled the breaded eggplant instead of frying (1 min. per side) & "sweat" the eggplant w/ salt before breading. To the breaading I added fresh garlic, fresh chopped scallions & I had a bunch of fresh parsley to use, so I threw that in too. Used only 1 egg & also threw some fresh baby spinach in the ricotta mixture. I woudl have never thought of this as a use for Ricotta - thanks!

Mediterranean Stuffed Chicken
My husband & I just made this & loved it! Based on other reviews we added chopped scallions, a few chopped black olives & fresh garlic, salt & pepper to the cream cheese mix. And we cut pockets in the ckn., stuffed, secured w/ toothpicks, then dipped in melted butter & breaded in 1/2 ital. crumbs & 1/2 parm. cheese. Then added 4 T lemon juice/4T ol. oil to the baking dish. The ckn browned & the sauce was wonderful over lemon rice. We had salad & dill steamed carrots & a great night - thanks!
