Easy and Delicious Crusty Popovers

I've never tried a better popover recipe. They rise up like little chef's hats. They are crunchy on the outside and smooth on the inside. Easy to make, too! This is now my standard recipe for popovers!

Yellow Squash and Corn Casserole

This is a wonderful recipe and I am so glad I tried it. I made a few changes to suit my family. Took out the Parmesan cheese (my guys don't like it). Added a can of whole kernel corn, a half a cup of chopped green peppers, and a half of cup of red peppers. The second time I made it I forgot the sugar and it tasted just fine, so I probably will leave it out from now on. This is a pretty dish and very tasty!

Chicken Pot Pie I

Sometimes, all you want is an easy, tasty, healthy dish. This one certainly qualifies. I used frozen veggies from our garden, low fat soup, added some ranch dressing mix (for the seasoning). Served with a green salad and a fruit cup, this was a great entree for dinner before Christmas Eve church and family activities.

Popovers

This is a great popover recipe! I have tried many through the years, and this one is one of my favorites. I always add a teaspoon or so of vanilla extract to my popovers, and I did this recipe, too. I also find that a preheated, greased pan makes a big difference in removing the popovers and in having a nice crisp crust. But even without those tweaks, this is a great recipe!

Slow Cooker Tamale Pie

This is a great recipe for the slow cooker and can be easily adapted to the oven - which is a plus in my cookbook! I added diced onions and green peppers to the ground beef. Otherwise, I followed the recipe exactly as it's written. For the oven, I used a 10x10 corning ware dish, cooked it at 400 for 20 minutes and it was great. With a salad, it fed my family of three heartily, but there were no leftovers the first time. So, I will double the recipe next time.

Spinach Chicken Parmesan

Excellent recipe! I breaded and browned the chicken before baking it. I also added finely chopped celery to the spinach. This was a delicious, healthy meal. My family requested that it be added to my regular dishes!

Moroccan Tagine

Excellent dish. The second time I made it,I added a cup of diced apricots to make it sweeter. But the original recipe is wonderful. This combination of seasonings is exotic and delicious. This will be a regular meal at our house.

Creamy Baked Chicken
