About this Cook
Busy with my wonderful family, church, and work. Love to make healthy meals that are easy to prepare.
My favorite things to cook
I cook a lot of chicken, so I am always trying new recipes. I have a few 'never fail' dishes which are requested for family reunions and church dinners.
My favorite family cooking traditions
I come from a long line of Southern cooks who made everything from scratch. I've continued the 'family jar' tradition with pickles, jams, jellies, soups, and other items I 'put up' (as Mama called it). My day to day cooking is lighter and leaner, but still has a Southern twist.
My cooking triumphs
Well, I've never won a ribbon, but I make a pretty good banana nut bread.
My cooking tragedies
Too many to list. One that is quite memorable was the five pound meatloaf I made when I was 16 years old. I forgot to put any sort of seasoning - no salt, no pepper - just ground beef, green peppers and onions. My family cheerfully ate it anyway. I think we used a whole bottle of ketchup at that meal.

Easy and Delicious Crusty Popovers
I've never tried a better popover recipe. They rise up like little chef's hats. They are crunchy on the outside and smooth on the inside. Easy to make, too! This is now my standard recipe for popovers!

Yellow Squash and Corn Casserole
This is a wonderful recipe and I am so glad I tried it. I made a few changes to suit my family. Took out the Parmesan cheese (my guys don't like it). Added a can of whole kernel corn, a half a cup of chopped green peppers, and a half of cup of red peppers. The second time I made it I forgot the sugar and it tasted just fine, so I probably will leave it out from now on. This is a pretty dish and very tasty!

Chicken Pot Pie I
Sometimes, all you want is an easy, tasty, healthy dish. This one certainly qualifies. I used frozen veggies from our garden, low fat soup, added some ranch dressing mix (for the seasoning). Served with a green salad and a fruit cup, this was a great entree for dinner before Christmas Eve church and family activities.
