Lucky New Year's Black-eyed Pea Stew

Good stuff! Add some extra ham as the ham hocks are mostly for flavoring and not much meat. With the kids eating it I know it will bring us luck!

Peanut Butter Cup Cookies

These cookies are delicious and the kids love them. I made them just like the recipe and took the suggestion of making them in mini-muffin tins. The first attempt was a bit of a disaster getting them out of the pan. The second time I used mini muffin liners and that made all the difference in the world.

Black Bean Avocado Salad

I made this as a side dish for bbq steak and it was great. It was super easy to make and had a nice light summertime feel. I agree with the other reviewers in that I think it was missing a little something. Next time I think I might add more jalapeno or maybe red pepper for a little more heat.

Beef Stew VI

I followed the recipe with the addition of browning the meat after flouring and seasoning it. The flour and oil drippings make for a nice base to this stew. Me and the man really enjoyed it, the kids not so much.

Shrimp Etoufee III

This was a super easy meal to impress the family. I doubled the vegetables and added half a can of tomato paste and chicken broth instead of water, yummy!

Real N'awlins Muffuletta

The real trick is getting good bread. Foccaccia bread works really well for soaking up the oil from the olive salad. I doubled the olive oil in the salad, added some roasted red pepper and halfed the amount of meat/cheese, it was excellent! One recommendation would be to used toothpicks to keep the sliced sandwich pieces together.

Golden Pork Chops

I would definitely follow the other suggestions in pan frying the pork prior to cooking the casserole. I also think 2 cans of soup is too much, we lost a lot of onion and mushroomsn in the excess gravy. Adding fresh mushrooms, garlic and onion gave it a nice flavor but scale back on the canned soup and this is a winner.

Easy Salsa Meatloaf

This was so easy and a big hit with the kids. Like other reviewers I added a bit more fresh salsa, it made a big difference. I also used Rotel diced tomatoes with cilantro and green chiles which added a nice kick. I would double this recipe next time for yummy leftovers.

Pasta Chickpea Salad

This is delicious for kids and adults. I was actually searching for a pasta and pea salad recipe when I found this and subsituted the olives for frozen peas. The kids loved it!
