Beer Pancakes

I am truly stunned. My college age son and I were looking for a recipe for Ebelskiver. I am so glad I couldn't find any! We came upon this at about midnight and after one reviewer said "it made a great midnight snack", we said "what the heck!" These turned out to be the tastiest pancakes we have ever had. We used Tecate Light, and followed the recipe to a "T". Try it, you won't believe it! Can't wait to try the cream soda!

Cheesy Baked Cauliflower

I've made this before and it was great, but I made some changes this last time that were amazing. Instead of the mayo and mustard, I purchased a jar of "Thai Mayonnaise" which I spread on the cauliflower, then covered it in Swiss cheese before baking til golden brown. It was spicy, but the flavors were unbelievable together.

Simple Swiss Chard

Holy cow! That was good! My kids ate this!!! I didn't make enough thinking they wouldn't even look at it, let alone taste it. I will have to make it again soon so I can have some! Thanks for a great recipe I will use again and again.

Normal Chicken

Wow! This was great. Of course with some modifications: in lieu of Worcester Sauce, I used Chip Davis's Bry. I added the brown sugar, topped it all off with sliced green onion, a little cilantro and crushed salt. I used thin sliced breast halves and baked it for 30 minutes. A definite winner!

Green Sauce Enchiladas

This was the best enchiladas I have ever had. My fussy children loved it, too. I also made some changes to the recipe: I marinated the chicken in lime juice, chili powder, garlic, salt, pepper, diced green chilis and jalapenos (one small can each), and a bit of tequila for a few hours before cooking. I used shredded mexican jack in each tortilla instead of adding to total mixture and I used 3 cans of green enchilada sauce. I also slow sauteed diced jalapenos and serrano chilis in olive oil and served over the top (taste buds permitting). Thanks Dawn, and all the others who have helped make this a terrific dish. Ole!
