Bacon Wrapped Water Chestnuts II

These are fabulous! If I have a party and don't serve these I am in TROUBLE! The sauce makes enough to double the recipe. I use a thin bacon and cut it into thirds, then wrap each chestnut in a third of the whole strip. I also bake it longer, approx 40 minutes as I like the bacon crisp! Its a must have staple for any party!

Pasta Con Broccoli

Our local Rich and Charlies restaurant makes this pasta and it is too die for! I cook the mushrooms in butter, steam the broccoli and then make the sauce all separate. Once the nnodles are cooked i add them together. Even better the net day. Adjust tomato/garlic/Parm to taste. GREAT for a crowd!

Bacon Water Chestnut Rolls

If we have a party and I don't make these I am questioned the whole night.."where are the bacon chestnuts?" I did change a couple of things...first of all I use a thin sliced hickory bacon. I take the bacon package and cut it into thirds, then use 2 cans of chestnuts (trust me there will NOT be any left over!) By slicing the bacon in thirds and using a thin slice of bacon it wraps easier and cooks better. Check your cooking time as I usually keep mine in the oven for 30-45 minutes. I like my bacon CRISP! I do NOT pour the suace over the bacon chestnuts and cook for an additional 30 minutes. I leave the sauce as a side item (ever watch When Harry met Sally?) for dipping if they choose to. Not need to double the sauce as it makes plenty as is.

Burrito Pie

I saw this recipe and used it for a PTO teachers dinner. I kept my fingers crossed as I hadnt tried it before taking it into the teachers. It was a HUGE hit! I made it again for a birthday and even froze one and brought it out a week later and it was fabulous. By placing them in a round cake pan, it fits perfectly! Getting ready to make it for a friend who just came out of surgery as I know it will freeze well and she can cook it at any time. I too spread the refired beans on the wraps and placed them "bean side down" instead of mixing it in with the meat. I plan on adding some mexican corn the next time I make it to brighten the color. Great for a crowd, you can make it ahead of time and just throw it in the oven when the guest arrive. ENJOY!

Warm Crab Parmesan Dip

Great dip, very easy to throw together at a moments notice. I used one 8oz cream cheese, about 2/3 cup mayo and sour cream, I used dry minced garlic, 3/4 cup grated parm and 3/4 cup packaged shredded parm., 2 cans of crabmeat, then took a bunch of green onions and threw it in for color and sprinkled papika for color on top of dish. Found it only took about 25-30 minutes for it to get hot and bubbly, served with assorted crackers. Everone loved it. If anyone has tips on how to prevent the yucky grease from the cheese from spoiling the look of a great appetizer once everyone starts digging into it and it pools on the bottom of the serving dish I would love to hear them! Plan on making again next month for a birthday party.

Holiday Chicken Salad

Made this for guest at my moms surprise 70th birthday party. She loves chicken salad, plus it was easy to triple and make for a crowd. After making it the tasteas wonderful, but the next night at the party it was out of sight! Do yourself a favor and make it ahead of time, give the flavors a chance to mingle! I did sprinkle some sugar in mine to give it a hint of sweetness.

My kids and husband liked this recipe. I too mashed the bananas and I did add nutmeg, cinnamon and a few other spices. Will try again with chocolate chips or maybe walnuts or both!

Mouth-Watering Stuffed Mushrooms

I made these for the first time for a surprise party I was hosting. Looking at past reviews I did add crab meat and sprinked top with shredded Parm cheese. I even cooked stems in half Olive oil and half butter for more flavor. The reviews were "to die for" and "I haven't had these since I ate at (restuarant)" . I am making them today for my daughters family birthday party tomorrow and love the convenience of being able to make them ahead of time and pop them in the oven before everyone arrives! Easy, quick and a variety of possibilities to change the flavor by adding different ingredients such as crab, sausage, bacon, ham, etc. Thank you so much for posting this recipe, it will be a staple at all my parties!

King Ranch Chicken Casserole III

I made this just last week and eveyone including the kids liked it. I did add my own twist to it by using what I had on hand such as a red and yellow peppers. I also cut up flour torillas and added black olives to give it more color. I used cheddar jack cheese as well. Easy recipe to double for a crowd. My husband ate his by scooping the casserole with torilla CHIPS and making it a finger food. Will make again.
