MMMMM... Brownies

wonderful!! I have made brownies from scratch for many years but this recipe is by far the best and easiest of all; perfect the way it is - no changes needed. Not a better tasting brownie out there! I doubled the recipe the 2nd time and put in a 11x7 pan - cooked for about 37 minutes which made for a really thick brownie. Believe me when I say a single recipe is not enough!! Some reviewers mentioned the thick batter being hard to stir - I think this is from letting the water/sugar/butter mixture simmer too long causing some of the liquid to evaporate - when this happens just add another tablespoon of butter or two to the mixture before adding the eggs and dry ingredients. Our family likes their brownies frosted - so while the brownies are still warm I put a thick layer of good old fashioned chocolate frosting on - this way it kinda melts into the brownies and makes them even better. Also want to mention there is a similar named brownie on this site so don't be confused - just copy this one to your recipe box. You won't want to lose this recipe.

Mrs. Sigg's Peanut Butter Cookies

By far the best Peanut Butter Cookie. This makes a nice batch -approximately 50 - of good sized cookies! I have been making good peanut butter cookies for many, many years but after trying these, they will become my best peanut butter cookie recipe. I made exactly as written. Baked for 9 minutes; the cookies were still soft the 2nd day.

Strawberry Torte

This is a wonderful recipe and a great do ahead dessert. Originally I gave this 4 stars because I had to deviate and use Angel Food cake. I made this again- as a substitute for traditional birthday cake- using Lady Fingers from a recipe on this site. Now... an Amazing 5 Star! Looked beautiful! My whole family loved it (none left) and said it looked like a picture from "Betty Crocker". Free up your dinner preparation time by making this dessert the day before - you will love the enhanced flavor!

Fried Chicken with Creamy Gravy

I believe I must have overcooked the chicken. It was crispy - but not tender and juicy on the inside - kinda dry! That is why I only gave it a 4 star rating. Next time I will adjust the cooking time. This is the way I was taught to make gravy - it is the best!

Ladyfingers

These were really good and turned out perfect. I think I know what is causing the "spreading" for some of you. My first two batches were put on room-temperature prepared cookie sheets and baked for 8 minutes. Absolutely no spreading. I was careful to refrigerate the rest of the ladyfinger mixture to keep it cool while the first ones baked. BUT, I guess the cookie sheets were too warm when I put the 2nd batches on them and there was some spreading. So I believe the temperature of the baking sheets - not necessarily the ladyfinger mixture - is an important factor to minimize spreading. The spreading did not change the flavor and I used these for the center part of my trifle. I have never made ladyfingers before (usually substituted Sponge or angel food cake) but these took little time and are made with everyday staples you would have on hand. Thank you for sharing this recipe - I will use it often.

Crispy Fried Chicken

If you use the techniques as written you will have perfect fried chicken! Nothing I can add that could make it better. I also tried this with fried wild turkey (it is turkey hunting season here!) - I really did not change a thing - except cut the turkey breast into strips - then followed this recipe and the techniques. Pan drippings made a wonderful gravy. I agree with the one reviewer - I have fried chicken many ways - some pretty close to the way this recipe says - but had not used the specific techniques as called for here. It really makes the most wonderful difference.

Lemon Meringue Pie III

Excellent recipe. I also did not refrigerate the filling and had no trouble with the meringue. I only made one minor change - only because I like a high top meringue - I simply added two additional egg whites before beating. The extra egg whites will give you more than enough for a beautiful Meringue top with lots of peaks! I had never made a Lemon Meringue Pie where part of the meringue was added to the filling, It was wonderful and added more volume to fill a 9" pie crust perfectly. I have never had so many compliments on a pie - Well worth the effort. I will make this again and again!

Chunky Cheesecake Brownies

Turned out perfect. Followed the recipe exactly. I did use a smaller sq pan to have really thick brownies and had to bake for almost 50 minutes but ever so good!!! I did refrigerate to cool down but enjoyed them better at room temperature - Thanks for a great, easy recipe.

The Best Rolled Sugar Cookies

I followed the recipe exactly and they turned out wonderful. I have always avoided making sugar cookies because they never turned out like I wanted and they were such a mess to work with. Not these - the dough worked really well in rolling out and the flavor was just what a sugar cookie is supposed to be. The baking time was perfect -

Baked Beans, Texas Ranger

These Baked Beans were good for a non-traditional type of baked bead dish. Good for the younger crowds because they like spicy foods but I prefer a more traditional baked beans dish with bacon and brown sugar!

Chocolate Truffle Cheesecake

This was well worth the extra work - Some of the reviews complained how the carmel was hard to cut so I just added an extra tablespoon of melted butter and I did not have a problem. I also liked the comment about baking and then turning off the oven for three hours - I did not have any cracks. I also made the fabulous Hot Fudge Sauce from this site and covered the top and let it drizzle down the sides after it was baked - really rich but then if you are going to eat chocolate that is the way it is supposed to be. I let this sit in refrigerator overnight and took out about 3 hours before serving and it was perfect to cut and enjoy.

Herb Roasted Pork Loin and Potatoes

Excellent Roast. Very moist and flavorful. I did sear on all sides before roasting and instead of an oven rack I cut up a large onion and rested the loin on that. Otherwise I followed the recipe exactly.

Decadent Peanut Butter Pie

Just excellent - my son's comment says it all "Mom, it is awsome!". I too, used powdered sugar and an oreo cookie crust. I made two, one as written and the 2nd with powdered sugar and oreo cookie crust which I froze. It froze up nicely and was even better on the 2nd day. A very nice recipe - thanks for sharing.

Fresh Southern Peach Cobbler

Very, very good. I made exactly as written except I made 1.5 of the cobbler dough as advised in several of the reviews. It filled a 9x13 pan and cooked in approximately 20 minutes. Mine looked exactly as shown in this photo - a recipe I will use often.
