I enjoyed this recipe! It is moist, delicious, and easy to make but it needed a little boost. I, too, made some changes to this recipe.
I added 1 tsp vanilla, 1/4 tsp ground cloves, 1 tsp ground ginger and changed the 1 Tbsp nutmeg to 1 tsp. I also used 2 cups white sugar and 1 cup brown instead of 3 white. I added 1 1/2 cups chocolate chips, per other review suggestions, but I think it is too much and takes away from the pumpkin flavor.
I may also add a simple cream cheese frosting on top for extra flavor and texture.
I did not add the walnuts.
The recipe yielded four mini loaves and one 9"x5" loaf. But could possibly yield 3 9"x5" loaves as well.
