Creamy Au Gratin Potatoes

Gina's Lemon Pepper Chicken

Simple and tasty! I wanted to top a Caesar salad with some chicken and this was perfect. I butterflied and pounded the chicken breast first, pan-seared it with a bit of olive oil and finished it off in the oven. I only made one breast and seared it on medium-high heat for about 2 minutes on each side and baked @ 350 for 12 minutes. Will make again!

Sweet Potato Enchiladas

I made these because of all the good reviews, but I wasn't sure I would like them. They are just as good as everyone keeps saying! I had 2 and a half baked sweet potatoes left over from Easter dinner, so that's how many I used. I added half a block of cream cheese and the full amount of spices. I didn't fry the tortillas, just heated them up in the microwave and put them in the enchilada sauce before filling up and rolling them. Added a bit more sauce and cheese on top. I used Chi-chi's Mild red Enchilada sauce and I thought it was tangy enough to compliment the filling. I'm already looking forward to having some tomorrow!

Sangria! Sangria!

Very forgiving recipe if you don't have everything on hand. Changed it up a bit to make it similar to the sangria I drink at my favorite tapas place. Used apples and oranges as the only fruits, no sugar, ginger ale for bubbles and I used one bottle of Merlot and one bottle of bottled Sangria wine (I doubled the recipe). I just made some for tomorrow night and I'm "sampling" it. It's really good but I can tell it's strong!

Jalapeno Garlic Tilapia Pasta

I've made this at least 3 times since I found it and we love it! I serve the fish over brown rice and spoon the spicy cream and tomatoes over it instead of mixing everything together. And, even though we love spicy, I cut the cayenne in half and it still has a good kick for us. My super picky husband loves this dish.

To Die For Blueberry Muffins

Don't think this needs any more reviews, but I had to say these are wonderful. I was out of vegetable oil, so I had to use olive oil and I used 2% milk. Everything else I followed. I had a lot of topping left over, so next time I might cut in half. Made earlier today and I only have 4 left (of 9 :)

Tacos in Pasta Shells

Really good! I used 1.5 cups flour, half the salt and added .5 tsp baking powder. 1/2 cup pecans b/c that's all I had. These are dangerous!!

Pecan Pie Bars I

Just tried them and I really liked them. I made 24 servings in a 9x13 dark pan, baked @ 325 for the specified time and they came out great. I had no problems with my crust, maybe the ratio of filling to crust is different if you use a smaller pan? I definitely recommend this recipe.

Sonoran Tilapia

Mmmmmm It was great! Used Creole Seasoning Blend from this site, used canned fire roasted tomatoes and green peppers instead of the Anaheim. Oh, and I didn't have wine so I used a splash of Tequila instead :) I served it over brown rice with an extra splash of lime juice. **** UPDATE: I bought Creole seasoning and this time the fish came out waaaaay salty, so if you use store-bought seasoning, you might want to cut back or omit the extra salt.

Really good! I baked for about 15 minutes instead of 12, and they were tender, but not mushy. I used olive oil spray and didn't have garlic salt, so I used garlic powder and regular salt.

Oven Roasted Red Potatoes

I realized this is the recipe from the box of soup mix. The directions are just a bit different (bake at 425 for 35 minutes). I followed those and the result was perfect. Can't see how you can go wrong either way though!
