Skillet Pork Chops with Potatoes and Onion

I followed the advice of others and removed the pork chops after browning, added the onions, and then after the onion softened, I placed the chops back on top of the onions, and then continued with the directions However, I did not add any salt to the mixture. The 3 beef bouillon cube add PLENTY of salt by themselves. We loved the potatoes, and not only was the meat tender and juicy, but we used older chops out of the freezer, and the flavors of the onions and bouillon covered the little bit of freezer-burn wonderfully. This is a great base recipe and we'll play around with additional ingredients to personalize it to our tastes. Thanks for posting this!

Slow Cooker Cider Pork Roast

Green Risotto with Fava Beans

Without the parmesan I think it get 5 stars, but honestly I think the cheese detracts from this otherwise wonderful dish. The first time we made it we LOVED the taste as we were preparing it and it was nearly done. We felt like fools when we realized that the entire skillet was ruined when we mixed in the parm which completely overpowered the dish. Yes, we had a very strong cheese, but still, it didn't seem to go well with the other flavors. Do yourself a favor and add the cheese to a small sample first. Also, have plenty more broth on hand as we found it to be much thirstier than the recipe states.

Green Salsa

This was a great way to make use of the surplus tomatillos and hot peppers I had. Wonderfully tangy and addictive. I added more peppers (some serranos). It gave it more heat without altering the flavor much. Will definitely make again.

Chiles Rellenos Pie

I love the chiles rellenos I get at the only decent Mexican restaurant I've found in all of central PA, so I thought I'd give this a try. roasting the poblanos made the house smell wonderful, and this dish smelled wonderful, too. I kept thinking as I was making it that the recipe calls for A LOT of cheese. Yep, the flavor was dominated by the cheese and salsa. The poblanos were far too masked, and the egg/sour cream mixture poured on top of the chicken had more of a custard-like texture than the quiche-like texture I was hoping for. This just didn't do it for us at all, and we very disappointed.

Coconut Curry Tofu

Loved this recipe. The combination of coconut and curry is fantastic! The only change I made was with the tofu. Preparing according to the recipe, the tofu can get all mashed apart. To avoid this and to firm it up, I drained the tofu, cut it up into cubes and then soaked it in a mixture of half water and half Bragg Liquid Aminos (like soy sauce except a little better IMO). Then I drained the tofu and sauteed it in a tablespoon on oil over medium-high heat until lightly browned. Then I added it to the dish only a minute before serving.

Russian Mushroom and Potato Soup

I hate when people alter the recipe and then rate the recipe based on the changes they made. I believe rating should be on the recipe as it is written. That being said, we're giving this one 5 stars. I can see how some of the suggested additions/adjustments could be good as well, but the recipe is wonderful as is. The aroma, flavor and texture were all good enough that I could see this soup served at a fine restaurant. The ingredients all worked together very well and there wasn't anything that seemed out of place. I was worried about the dill and thought it would overpower but it definitely does not. I can see how some people might find this soup to be a little on the heavy side (with the half-and-half and the butter) or salty side (with the use of regular chicken broth), but personally I don't think anything needs to be done. I think it's a good fall soup worth trying.

Creamy Potato Leek Soup II

This should be renamed "salty bacon soup with leeks and potatoes". I've made potato leek soup in the past but couldn't find the recipe, so I used this one after seeing the 5-star rating. I disagree and think the balance is way off. I only had 2 very small leeks versus the 3 the recipe called for (but that was sufficient), only 12 oz of bacon instead of 16 oz., and after cutting up 4 medium-large potatoes, I decided that was enough. We found the soup to have not enough liquid, too much bacon, and WAY too much salt. I'd fix this recipe by using only 8 oz. of bacon, using reduced sodium chicken broth, and using more than the 4 cups it calls for. Potato leek soup is a pretty simple thing, and this recipe just failed in my opinion.
